Recently divorced and lovin' it! Now I can foray into actual flavors and something other than the typical "meat & potatoes" standards.
My favorite things to cook
Baking is my forte. Cookies, cakes, muffins - you name it. I love making it! I also like making food with a Southwest / Mexican appeal, but I'm open to try just about anything.
My cooking triumphs
I have learned how to 'hide' or 'sneak' in healthier options. (Chocolate Zucchini Muffins made with baby food prunes and applesauce). Spinach is a good filler in lasagna - just chop it super finely, and mix it INTO the red sauce as you layer! I'm not going full-boar, by any means, but small steps to eek in fruits and veggies into the family's diet. ( Although, my lil' lady will choose fresh fruits & raw veggies every chance she gets!:) )

Texas Chocolate Frosting
Sublime. Scaled this down to half for 18 cupcakes and still had some leftover, but I wasn't opposed to eating it by itself.... Used butter instead of margarine. And just eyeballed (evaporated) milk in until it got to the consistency I wanted.

Minnesota Pork Chops
For one who's not real big on pork, this is way I dig it... It's versatile and easy - and the chops are rarely ever dry. You can use white, brown or wild rice. And, I always play with seasonings - Penzey's Sunny Spain, Black & Red, Pasta Sprinkle. WATER WATER WATER in the rice! You'll think it's too much, but it isn't - TRUST ME.

Graham Cookies
Quick and easy with very minimal-staple- ingredients. I went ahead and made it the "fudge" way in an 8X8 pan. I used fifteen SHEETS of graham crackers - broken by hand - into a mix of dust and pieces. Threw in a pinch of salt and used just a bit less sugar. It doesn't present very well, and is rather "crumbly". It's just alright and did it's job taking care of my sweet beastie - however, seemed to be "missing something." Next time, I'll just go with Buckeyes...
