Amish White Bread

I'm a first timer too and this recipe turned out great! I did test the yeast and it was fine and then it took almost ten hours for the bread to rise. Seriously. And it still could have gone longer, but I couldn't wait. I had to go to sleep. I don't know if our house is too cold or what, but I'm glad other reviewers mentioned that it won't hurt the bread to just let it rise as long as needed. I'm looking forward to summer when, perhaps, the process won't take a whole day! Oh and also, I made rolls too, froze them, and they baked up pretty well.

Chicken Biscuit Pie

So, so good. I didn't have chicken broth so added more milk and more salt and was lazy and used store bought biscuit dough. As anticipated they didn't cook on the bottom. I flipped them and cooked another 10 minutes which didn't help with the aesthetic, but so, not a big deal. Will make again and again and again...

Spinach Enchiladas

Amazing. The best enchiladas I have ever had. Anywhere. I made some changes to spice it up a bit. I added chopped jalapeño, green chilies (both from a can), and shrimp. I didn't have ricotta or sour cream so I used cream cheese.

Grandma's Green Bean Casserole

I loved this and so did my guests! I modified it a bit by using fresh green beans which I steamed briefly before mixing into the casserole. They added some freshness and crunch! Initially skeptical about the cracker top--it turned out delicious!

Simple Whole Wheat Bread

I been on a bread tear all month long and I'm happy to report that this recipe is the winner. By far. Way better than that pesky Amish White Bread listed on the site. The idea of just a few hours of rising time is a absolute joke though. I admit, we keep the house pretty chilly, but, for me, this bread took almost 8 hours to rise all told. I usually just prepare it in the morning, put it covered in the sunny windowsill and then go about my day. I use one, refrigerate one, and freeze one and that usually last me and my boyfriend a month at least. Get some pepper jack and make yourself a grilled cheese sandwich that will blow your mind.

Turkey and Quinoa Meatloaf

My very first attempt at meatloaf (turkey or otherwise) ever and it turned out wonderful! I was shopping at TJs so no Worcestershire sauce instead I used the Trader Joe's brand steak sauce ultimately probably making the whole dish a little sweeter. My only hiccup was that the 15-20 minute cooking time for the Quinoa was way too long. I ended up burning it and charing the pan. I ended up doubling the amount I cooked (only using half) -- my saucepan was probably just too big -- and cooking for ten minutes. I will, for sure make this again and enjoy the leftovers this week. Juicy Roasted Chicken

I have made this twice and loved it both times. No changes are necessary even though for me (and apparently some of you) it's torture not getting to add my personal culinary flourish. I leave you with this: I like to stick half a lemon in the bird.

Cousin David's Slow Cooker Brisket

This was our New Years Day Dinner. 100% great--added halved sweet onions to the base of the crock-pot and they were soooo yummy after cooking. Had to do it on the high setting which made the meat approach dryness. I'm sure it's perfect when you have time to do it on low.

Balsamic-Glazed Salmon Fillets

I made this exactly as instructed and it was gorgeous. Beautifully cooked salmon and I saved the extra glaze and used it on some chicken the next day. Yum! I'm making it again tonight!

Frozen Pineapple 'Ice Cream' Sandwich

Great recipe, easy and fun to make. I had a bit of difficulty getting the consistency of the filling right so it was easy enough to spread, but not so melty that it dripped out of the cookies. I ended up blending the mixture then putting it back in the freezer for a day, then microwaving it the next day. I'm sure there was an easier way, but it all worked out in the end. Oh and as other reviewers mentioned, the sandwiches dont really keep more then a week before the grams get soggy.

Cottage Pie

Really yummy, but really heavy. I mixed 2 sweet potatoes with 2 russet to make it slightly healthier and I think the sweet potato went really well with the nuttiness of the seasoning.

Peach Pie

I think it's all a matter of peach quality--mine weren't fantastic. I added the cornstarch to avoid runnyness and added cinnamon. A good base recipe to showcase good fruit, which, I didn't have.

Chicken Salad

Wonderful! I made a batch, ate it up and then went back to the store to buy more chicken to make a second batch! I used grapes and granny smith apples, no water chestnuts, no bacon and added some curry powder. One thing though: Mayonnaise. Whoa. I mean, it calls for a lot! I halved it on my first batch and used even less the second time around. I would say, just be careful, adding and tasting as you go.

Summer Zucchini Casserole

I used mushrooms instead of carrots and added Italian sausage, which gave the dish a very brunch-like feel. My friends and co-workers loved it. I mean LOVED it, but I found it too salty. Probably my fault though for adding the sausage. I would suggest if you add a seasoned meat, to get unflavored stuffing mix.

Strawberry Pie II

My first attempt at strawberry pie and it was easy as..um...pie. I reduced the sugar too. I also wish I had sliced up the fresh strawberries at the bottom a bit more. A success!

Like the other reviewers I added Celery and Mushrooms. Mine turned out too think even though I used 1% milk, so I've had to add water when reheating. Still very yummy!

Beef Stew VI

I doubled the recipe and served this to 20 guests at a Christmas party. I made it two days before and cooked it without a lid for an hour before serving and finally it got think enough. My guests loved it and said the vegetables were cooked perfectly!
