Peach Pie

I think it's all a matter of peach quality--mine weren't fantastic. I added the cornstarch to avoid runnyness and added cinnamon. A good base recipe to showcase good fruit, which, I didn't have.

Chicken Biscuit Pie

So, so good. I didn't have chicken broth so added more milk and more salt and was lazy and used store bought biscuit dough. As anticipated they didn't cook on the bottom. I flipped them and cooked another 10 minutes which didn't help with the aesthetic, but so, not a big deal. Will make again and again and again...

Chicken Salad

Wonderful! I made a batch, ate it up and then went back to the store to buy more chicken to make a second batch! I used grapes and granny smith apples, no water chestnuts, no bacon and added some curry powder. One thing though: Mayonnaise. Whoa. I mean, it calls for a lot! I halved it on my first batch and used even less the second time around. I would say, just be careful, adding and tasting as you go.

Mom's Macaroni and Cheese

I added some broccoli and tuna and increased the cheese as recommended. I liked it more than my previous attempts at mac and cheese, but it still came out a bit bland. I would absolutely use the recipe again as a jumping off point for some creative exploration.

Eh. I don't know what I expected. It tasted exactly how you would imagine. I used only peaches with a marmalade glaze and it was gorgeous, but pudding heavy and indelicate.

Summer Zucchini Casserole

I used mushrooms instead of carrots and added Italian sausage, which gave the dish a very brunch-like feel. My friends and co-workers loved it. I mean LOVED it, but I found it too salty. Probably my fault though for adding the sausage. I would suggest if you add a seasoned meat, to get unflavored stuffing mix.

Strawberry Pie II

My first attempt at strawberry pie and it was easy as..um...pie. I reduced the sugar too. I also wish I had sliced up the fresh strawberries at the bottom a bit more. A success!

Baked Shrimp and Asparagus

Really salty and mushy my first time, but I think it has potential. I used fresh asparagus and added mushrooms, but it needed a starch or something to cut the salt of the condensed soup and soy sauce. I served it with fresh bread, but maybe next time I'll mix in rice...

Creamy Chicken and Wild Rice Soup

Like the other reviewers I added Celery and Mushrooms. Mine turned out too think even though I used 1% milk, so I've had to add water when reheating. Still very yummy!

Spinach Enchiladas

Amazing. The best enchiladas I have ever had. Anywhere. I made some changes to spice it up a bit. I added chopped jalapeño, green chilies (both from a can), and shrimp. I didn't have ricotta or sour cream so I used cream cheese.

Beef Stew VI

I doubled the recipe and served this to 20 guests at a Christmas party. I made it two days before and cooked it without a lid for an hour before serving and finally it got think enough. My guests loved it and said the vegetables were cooked perfectly!

Roasted Root Vegetables With Apple Juice

I wanted this to work so badly. I had never cooked with root vegitables and I was so excited to try something new. The glaze ended up to watery and the vegitables were rubbery. I ended up using the yams and carrots as a garnish on the Turkey and throwing the rest out. Such a disspointment.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

Although I didn't love this dish--a little too much garlic for me, my Thanksgiving guests loved it. Use fresh rosemary, it's much better.

Eggplant Parmesan II

My first time ever cooking with eggplant was a moderate sucess: I sweated the eggplant as sugested, doubled coated it with bread crumbs and parmesean, and baked for longer before putting it in casserole. My guests liked it, but it was salty, probably my fault for not washing the eggplant well enough after sweating.

Applesauce Noodle Kugel

I brought this to a Yom Kippur break fast and people couldn't get enough! As suggested, I cut the sugar and used unsweetened apple sauce. My only complaint was the graham cracker crust turned a bit soggy--perhaps something else would have been better texture-wise.

Grandma's Green Bean Casserole

I loved this and so did my guests! I modified it a bit by using fresh green beans which I steamed briefly before mixing into the casserole. They added some freshness and crunch! Initially skeptical about the cracker top--it turned out delicious!
