New Wife Tuna Salad

Lemony Garlic Shrimp with Pasta

Bypassed the brining aspect due to time constraints but will try it next time. Our local Albertsons had frozen wild caught gulf shrimp (16-20 count) in 2# bags for $ 13.98. How could I resist? Cut the recipe to 4 servings and it was excellent both on the day I prepared it and the next day as leftovers via the microwave. Wifey said better than a 5 * restaurant. HOWEVER, please be advised that quantity of liquid ingredients ought to be increased by a factor of 2. I'll double the wine, oil, lemon and butter next time. PS: We used Dreamfields angel hair for our pasta as wife in on primal diet and I'm type II diabetic. It has been a Godsend.

Aw-some Cole Slaw

Made this yesterday with a couple modifications. Substituted Truvia for the sugar and half & half for the milk; otherwise stuck to the recipe. The cabbage was super fresh as was the Texas 1015 sweet onion. After sitting in the fridge over night I sampled it and can say it is as good as any I've ever had. PS: This was my first attempt at cole slaw. Highly recommend. Four stars in stead of five is because it is not quite sweet enough for my taste but likely due to guessing on the Truvia amount ( 4 T) instead of the sugar.

Virgina's Tuna Salad

Excellent entree for a light lunch. Prepared this recipe with minor tweaks; used 3 6.5 oz packages of tuna rather than canned(better texture),added 1 egg (more substance), diced small red onion (more crunch), 1 T Dijon mustard (the heat is nice). Loved it. Will do again. Thanks, Kristiev

Grandmother's Buttermilk Cornbread

This was my very first try at cornbread. Exactly doubled the recipe and used a 13" cast iron skillet. Used a coarse stone ground corn meal from Bob's Red Mill. Turned out great. Moist. Substantial. Fantastic with my pot of Anasazi beans. Took last three wedges to neighbors. They called yesterday to say it was the best they have ever had. PS: We live in the South (East Texas). Thanks for sharing.
