Flank Steak with Garlic Wine Sauce

I needed a flank steak recipe without soy sauce (2 year old is allergic) and this fit the bill. The whole family liked this and my five year old declared it "the best." I used chardonnay because it was what I had on hand and let the meat simmer in the pan as the sauce reduced. I omitted the butter because my two year old is allergic, but we didn't seem to miss it. I'm sure we'll make this one again.

Easy Tuna Casserole

I do not like canned tuna, but I really, really liked this dish! Added one can of cream of celery and 1/2 can of milk along with cream of chicken. Also added fresh chopped onions, an extra can of tuna and canned peas (drained) before baking. Husband, toddler and I loved; pre-schooler wouldn't touch it! Made enough for two meals.

Slow Cooker Chicken and Dumplings

Very, very good. I did follow the advice of other reviewers: seasoned the chicken with salt, pepper and garlic powder; used chicken broth in place of water; added a bag of frozen mixed veggies just before dumplings; cut small biscuits into four pieces, balled them and rolled them in flour before adding to crock pot. Biscuits did not cook after 1 1/2 hours in crock pot, so I finished for 15 minutes in a 375 oven. Husband and I loved, kids weren't crazy about. Served over rice.

Sugar Coated Pecans

I've been making these for years, substituting vanilla for the water in the same ratio. My other advice is to use whatever baking sheet you have with the largest sides(lip) (or an aluminum one from the store). This helps keep pecans from falling down into your oven as you stir them. I have friends bring me pecans so that I'll make these for them. They're really addictive!

Southwestern Black Bean Stew

We LOVE this! I make it with ground turkey to lower the fat. A friend drains the beans, leaves out the water and makes this into a dip. Either way, it's always a hit. Tip: this freezes really well!

Slow Cooker Mashed Potatoes

These may not be the best mashed potatoes I've ever eaten, but they certainly are the best leftover mashed potatoes. No mistake, they're really good the first time around, too. But I gave the recipe five stars because they're just as good, if not better, the next time. I've used these leftovers with shepherd's pie and they make it truly outstanding. I've also made potato cakes and simply served them at another meal and they're always wonderful.

Bermuda Spinach Salad

This was really, really good. My husband went nuts over the dressing. I used red onion, which gave it a nice pinkish color. I left the eggs out of the salad and we loved it!

Pasta Salad with Shrimp and Basil

This was perfect for our picnic at an outdoor concert. I only let it sit for five hours and it was still wonderful. My 21 month old loved it, though she spit out all the shallots, and my mother-in-law asked for the recipe.

Baked Slow Cooker Chicken

This really wasn't any good. The chicken was dry and the skin was very, very soggy. I used lots of garlic powder, but it still didn't have much flavor. My husband and I threw out the leftovers and my toddler wouldn't touch it.

Tasty Tuna Burgers

These are a good alternative to fatty hamburgers and were tasty enough. I minced my veggies in a one cup food processor, which added more liquid to the recipe. I had to add another cup or so of breadcrumbs to make up for the extra liquid. I cooked these on my George Foreman Grill for four minutes. Our main quandry was which sauce to use on our burgers. I chose mayo, my husband chose ketchup and neither of us was really satisfied. Next time, we'll try tartar sauce or thousand island dressing. My nineteen month old, who normally eats anything, wouldn't touch these.

Easy Ham and Noodles

Good comfort food! I doubled the recipe and used 1 can of 98% fat free cream of mushroom soup and one can of cream of chicken soup. I added a small can of sliced mushrooms and a regular can of baby green peas. I also threw in some garlic powder and onion powder for good measure. I topped it with buttered bread crumbs. My husband loved it and I even got my 17 month old to eat some!

Grandma's Moist Cake

Bev's Orange Chicken

My recommendations: very salty, so use low-sodium soy sauce instead of regular; if you choose to remove the chicken skin to save fat, as I did, double the sauce recipe, baste every 15 minutes and turn the chicken over every 30 minutes. This was very easy and my husband liked it, though my daughter and I weren't wild about it.

Cake Mixes from Scratch and Variations

YUM, YUM, YUM! I made this during a couple of commercials last night and served it warm to my husband with vanilla ice cream and chocolate syrup. His response? MMMMMMMM .... He loved the "crust" of the cake. I loved the flavor. It did take about 45 minutes to cook, but otherwise, the yellow cake directions were right on track. We'll be making this one often!

Restaurant-Style Tequila Lime Chicken

AWESOME! My husband, who hates chicken breasts, went back for seconds! I will definitely fix this again and will also fix the white sauce just for snacking. I didn't even use tequila and we still loved the flavor.

Seven Layer Tortilla Pie

This was good, but a little dry. I might add some guacamole next time and maybe mix some spanish rice in with the refried beans. We'll definitely fix this again since we're trying to eat less meat, but I'll play with it some.
