Cajun Chicken Lasagna

My family love this combination of flavours! Most recently, I made some changes to suit what I had in the house. I didn't have lasagne pasta, so I used bowtie pasta instead. Also, I used two garlic brats, 1 chicken breast and turkey kielbasa. Rather than measuring out 1/2 a cup of a vegetable I just used two small/medium onions, 1 red bell pepper and 2 stalks of celery, and 3 pressed cloves of garlic this yields a bit more veg, but as I wasn't layering a lasagne, it wasn't a big deal. In place of fatty Alfredo Sauce, I used Campbell's Healthy Choice Cream of Chicken Soup with 1/2 can of Fat Free milk and topped the whole lot with 1/2 cup freshly grated parmesan cheese. Baked it as per the directions, and viola! We had a lovely Cajun Pasta Casserole. Yum!

Oat Waffles

This recipe did not work for me. The batter was entirely to thin and didn't raise at all in the waffle iron and I was left with a flat mess. I ended up using the remaining batter for pancakes, this gave better results, however, the pancakes were really thin. The flavor was nice, I probably won't use this again.

Chicken Breasts Pierre

This was fantastic! I only made a few changes to suit my cupboards, I didn't have plain vinegar so I used half apple cider and half balsamic. I also used crushed chilis instead of chile powder as my family likes spicy food. We served it over rice with a green salad. Oh, yes, I also only used 4 chicken breasts, we had just enough sauce! We will definately make this a repeat dinner!

Quick Lemon Dijon Chicken

I changed this a bit , I used 1 TBS lemon juice insted of lemon and lime (also, winter in England so lemons aren't exactly in season). I also added two spring onions and 2 cloves garlic chopped up and 1/2tsp honey when cooking the chicken. Then I served it on top of a romaine salad that had been tossed with a bit of olive oil, lemon,salt ,pepper, and Parmesan. Yummy! Very good for the diet effort as well!

Awesome Slow Cooker Pot Roast

I just needed something for dinner I could put on and forget about while the reletives were all enjoying each others company at the pub and else where. Wonderful! Easiest recipe I have ever encountered and it was a hit. I will definately be making this again and again.
