Pap Walters' Cornbread

Reviewed: Dec. 17, 2013
I was skeptical of this recipe, since I am not a fan of cottage cheese, but I love cast iron skillet-made corn bread and am always looking for a great recipe. I will look no more - I have found it! This truly is moist cornbread. I changed nothing. I didn't taste the cottage cheese, but it obviously made it moist - and the bacon fat really added to the flavor. It reminds me of the cornbread my grandmother made when I was a kid (but it's more moist)...

Crispy Fried Chicken

Reviewed: Dec. 17, 2013
I would not rate something 5 stars unless I REALLY love it, but from one who loves fried chicken, I have to say this is the best fried chicken I have ever eaten. The first time I made it, I had too much oil in my skillet, which resulted in a mess - start with your skillet no more than one third filled with oil - you can add more later if needed. Since that first time, no problems, just great chicken. I added a few shakes of cayenne pepper to the flour, but that's the only thing I did differently. If you love fried chicken, you MUST try this! Thank you Elaine!

Chocolate Fudge Buttercream Frosting

Reviewed: Mar. 18, 2012
This is the most incredible chocolate frosting. My only tip is don't over-beat it or it will be runny. I use this whenever I need a chocolate frosting. I always save the leftover frosting - it's great warmed up and poured over ice cream...

Chocolate Lovers' Favorite Cake

Reviewed: Mar. 18, 2012
I have now made this twice in the past 3 weeks - and have received rave reviews. This is definitely a chocolate lovers dessert. I frosted it with Chocolate Fudge Buttercream Frosting (also on Allrecipes), which is our favorite chocolate frosting. They are perfect together.

Creamy Au Gratin Potatoes

Reviewed: Mar. 23, 2008
I have made this several times over the past few years - without changing anything - and we love it. I would only clarify for first-time makers - if you use 4 LARGE Russet potatoes, like I do, you'd better use a 2 qt. casserole dish, or it won't all fit. I also place the dish on a cookie sheet in the oven, in case it bubbles over a little. This is a great recipe! Thank you...

Buttery Soft Pretzels

Reviewed: Mar. 23, 2008
These were excellent - and very close to Auntie Anne's. I made them for an appetizer before Easter dinner and they were devoured. I made half with salt, half with cinnamon sugar. After reading the debate over using 4 or 5 cups of flour, I used 4 1/2 cups. Worked great! I'll definitely be making these again.

Chuck's Favorite Mac and Cheese

Reviewed: Mar. 23, 2008
This is a keeper! I doubled the recipe to fill a 9x13 casserole dish. I was leary of the cottage cheese (not a fan) but left it in thinking it may be a crucial part of the flavor (though I did run it through a food processor first to eliminate chunks of cottage cheese). This is delicious mac & cheese. A cup of bread crumbs is way too much - it detracts from the flavor of the dish, so next time, I'll only use 1/3 of a cup of bread crumbs. Thanks for the recipe!

White Cake Frosting I

Reviewed: Mar. 15, 2008
I tried this recipe about 3 years ago and it quickly became my favorite white frosting. I've made it well over a dozen times. The only changes I make are substituting butter for half of the shortening amount and I use real vanilla extract (I never use imitation). I absolutely love this frosting (it's incredible with coconut on it!)
