About this Cook
I am a 51 year old man. I'm married and have 3 kids, 2 step-kids and one grandson. We have the entire combined families over for all major holidays and several occasions in-between, so my wife and I entertain alot.
My favorite things to cook
I like to try new dishes that look good to me, but my specialty and favorite past-time is baking. I love to try new desserts, especially cakes, pies, cookies and candies (obviously, I have a sweet tooth). Several of my desserts are often requested at special occasions.
My favorite family cooking traditions
We have birthday gatherings at our house for our extended family (we'll celebrate August birthdays, September birthdays, etc.) and I always let the birthday boys/girls choose the desserts I make.
My cooking triumphs
My specialty would be considered by most a large chocolate cake with a thick layer of cream filling and fudge-like frosting poured over it. This cake is almost like a big Ding Dong or King Don. I call it Devil's Food Delight, but when people request it, they ask for "that big King Don cake".
My cooking tragedies
The same cake above, before I perfected it. I've had the top layer completely slide off and it was a huge mess. But after a few improvements, it is an excellent dessert.

Pap Walters' Cornbread
I was skeptical of this recipe, since I am not a fan of cottage cheese, but I love cast iron skillet-made corn bread and am always looking for a great recipe. I will look no more - I have found it! This truly is moist cornbread. I changed nothing. I didn't taste the cottage cheese, but it obviously made it moist - and the bacon fat really added to the flavor. It reminds me of the cornbread my grandmother made when I was a kid (but it's more moist)...

Crispy Fried Chicken
I would not rate something 5 stars unless I REALLY love it, but from one who loves fried chicken, I have to say this is the best fried chicken I have ever eaten. The first time I made it, I had too much oil in my skillet, which resulted in a mess - start with your skillet no more than one third filled with oil - you can add more later if needed. Since that first time, no problems, just great chicken. I added a few shakes of cayenne pepper to the flour, but that's the only thing I did differently. If you love fried chicken, you MUST try this! Thank you Elaine!

Chocolate Fudge Buttercream Frosting
This is the most incredible chocolate frosting. My only tip is don't over-beat it or it will be runny. I use this whenever I need a chocolate frosting. I always save the leftover frosting - it's great warmed up and poured over ice cream...
