German Puff Pancakes

Even though I'm German, I don't recognize this recipe but I have to say it is simple, delicious and filling. I half the recipe and bake in a small cast iron skillet right in the oven. Delicious as is or served with a light drizzle of syrup. I have also made this, sans the vanilla and cinnamon, as a vegetable pancake with sautéed mushrooms and onions. This makes much more than one serving LOL!

Pumpkin Fluff Dip

The is so cute served in a small hollowed out pumpkin! I baked my pumpkin at 250 degrees for about an hour first to dry out the interior. This is best served with cinnamon graham cracker sticks and was a huge hit at our family chili supper.

Baked Potato Soup

This recipe was so easy to make and turned out wonderfully! I used sour cream instead of Half and Half. Since we really love cheese and bacon, I also added quite of bit of both directly to the soup instead of just using it as a garnish. I also used about 1/2 cup of potato flakes for thickening purposes. Yum!

Chinese Chicken Fried Rice II

Fiesta Rice Pilaf with Sausage

I created this dish because we had all colors of bell peppers from the garden and I was in the mood for rice. Our son had brought us some sausage, so I just added a few things to make a one dish meal. It's kind of like Rice Pilaf, enhanced version, and turned out really well, if I say so myself...even the kids ate it!

Sweet, Sticky and Spicy Chicken

This was an excellent recipe: easy and quick to make with just the right amount of sweet and heat. I added two green peppers and two red peppers to it for a garden fresh dinner.
