Artichoke Spinach Lasagna

I loved this, my spouse said it wasn't bad. Coming from a person who is afraid of artichokes and suspicious of anything meatless, that is actually high praise. Made it with half the broth (per the comments) and did not precook the pasta. One caveat, I made it in a 7x11 pan and expected left over sauce. There wasn't any, in fact I only had enough sauce for 3layers(2layers of pasta). Not sure how this is supposed to make a 9x 13 dish.

Apple Raisin French Toast Strata

Cut the entire recipe by 75% and made it in a 7 x 11 dish. Used Cinnamon Swirl w/out raisins, honey instead of maple syrup. Refrigerated for about 12 hours. Everyone loved it, second helpings all around!

Cheesy Ham and Hash Brown Casserole

Husband made this using halved recipe in a 7 x 11 pan. Pretty good but definitely needed more ham if using for a main course for people who expect a serving of meat in their portion.

Slow Cooker Chili II

Made almost exactly as written except: Sauted onions, pepper, celery and garlic before browning beef. Used crushed tomatoes (Aldi brand) rather than puree. Drained both cans of kidney beans. Doubled the chili powder. Still came out a little on the mild side, but very nice thick texture. I liked all the veggies, husband was a bit iffy about the celery. Was much thicker when left overs were reheated, almost dip consistency.

Blueberry Oat Bars

Only change was adding a 1/2 teaspoon or so of cinnamon to the base/topping mixture and a sprinkle of nutmeg to the topping. I don't remember the last time I took a desert to a family gathering that flew off the plate like these did! One person who didn't even get to taste them asked for the recipe because she heard they were so good.

Slow Cooker Latin Chicken

Used 1 1/2 pounds of thighs (each thigh cut roughly into thirds), 1 1/2 cups of broth and left the top off the crock pot the last 30 minutes to thicken the sauce. The result was a delicious, beautiful stew that provided 5 very generous servings.

Unbelievably Awesome Barbeque Chicken Pizza

Yes, this awesome...and so simple! My only change was I grilled the chicken breast, chopped it, then tossed with a couple tablespoons of barbecue sauce. Also, taste your marinara/barbecue sauce blend before you put it on the pizza. The spices in the marinara might over power the barbecue sauce, and what would be the point of that?

Sloppy Joes II

I've made this almost exactly as stated in the recipe (used ground turkey instead of ground beef) and in a crock pot using shredded left over roast turkey and both times it was very, very good. (In the crock it took about 3 hours on low and I had to add a little water to keep the "sloppy" from being too dry.)

Ciabatta

I didn't get quite the texture that is expected of Ciabatta bread, but the flavor was great. Texture differences could have came from quality of yeast, kneading time and temperature of rising, but I followed the directions exactly, so I'm rating those results. I'll make it again and probably increase the time of the first rise, and might use just a touch more yeast in the sponge.

Lemon Cream Pasta with Chicken

Made exactly as written and it was extremely bland. Nice creaminess, but just...blahh. The leftovers were a little better tasting than the first day, when the pasta had absorbed all the sauce.

Creamy Au Gratin Potatoes

Most of the family loved them, I thought they were a little bland. I tried to make them in the crockpot (as mentioned in several reviews), but after 6 hours and 30 minutes before all the other food was done, the potatoes were still raw (cheese sauce was nice, though). Luckily, there was time to move them to the oven, split between two dishes so they'd be single layers, and they were done in 30 minutes. Moral: Don't know how others did it, but I'll never try these in a crock pot again.

Mmm-Mmm Better Brownies

really good when they're fresh from the oven, but they become very dry and crumbly with each hour that they cool. The second day they're almost impossible to serve in a whole piece, however, crumbled and reheated in the microwave they gain back a lot of flavor.

Sauteed Apples

Wonderful breakfast side dish and/or topping. This goes great on top of a German Pancake. I use a little more cinnamon and a touch of ground cloves to deepen the flavor. Leftovers are great stirred into a bowl of warm oatmeal.

Danish Pastry Apple Bars II

My family adored these and asked for me to make them again, right away. Very nice crust recipe if you increase it by 1/2. I have no idea what the cornflakes do (maybe prevent it from getting mushy the second day?). Frosting was almost unnoticeable, but I suspect it adds some sweetness to the abundance of crust.

Butternut Squash Soup

I liked it a lot, the rest of the family thought it tasted too much like cream cheese. Lovely texture. Froze the leftovers as individual servings and those came out a little thicker, a little spicier, maybe even better than the original servings. If frozen, reheat very slowly - don't let it boil!

Batter White Bread

Nice basic white bread. I reduced the sugar by half (I think almost all white bread recipes have too much sugar) and the result was an open texture, soft crust that kept well for the three days it took to finish it off. The softness prevented thin slices, but this toasted so well in the toaster oven that none of it was used for sandwiches.

Oven Fresh Seasoned Potato Wedges

My daughter, a very beginner cook, took over making these when illness and work prevented the two regular family chefs from doing their jobs. She misunderstood a direction to cover the pan with foil as cover the potatoes with foil while they were baking. Mistake was discovered the last five minutes or so - but they still came out very good, possibly better for having been slightly steamed before they were crisped.
