Colombian Lentils

I'm new to cooking lentils, and this looked intriguing. Noting that the author called this a "starter" recipe (she recommends modifying it to your own pleasure, yes?) I made the following changes: (a) Instead of the potatoes, I used 1/2 cup corn and 1/2 cup diced green bell pepper. (b) Like Kitchenwitch, I sauteed everything in the oil before adding the water. (c) I served the lentils over big steamy baked potatoes with a dollop of sour cream & chopped cilantro garnish. What a *wonderful* dish -- thank you!

Western Beef and Beans

This was perfect for football playoff season. First I diced & cooked the bacon in a dutch oven, then drained the bacon on paper toweling and poured off most of the grease. I browned the meat, celery and onions in the same dutch oven. I had a can of beef broth on hand, so I used that instead of the granules (but while the bacon was cooking, I had reduced it in another saucepan over medium heat). I added everything together except the bacon, and baked it for over an hour (but I live at a high altitude, so that's normal for me). I served it over baked potatoes sprinkled with the bacon & grated cheddar cheese. It was a real hit!

Pumpkin Cheese Pie

FANTASTIC! I made this with a graham cracker crust in a 10" springform pan. I didn't prebake the crust. Total cooking time was maybe 52 minutes, but I live at a high altitude and it takes things longer to cook up here anyway. Final product is BEYOND good! Thanks so much for posting it! ****When I served the final pieces last night, I heated them up instead of serving them chilled. They were JUST as good!

Steamed Christmas Pudding

I like to "test" holiday recipes way early in order to have enough time to decide what to make/give to family and friends each year. This is a winner all the way around. I'll be baking it in small loaf pans instead of steaming it, and that's the only change I'll make to this recipe. Thanks, Leeza!
