Italian Cream Cheese and Ricotta Cheesecake

This was soooooo good, ricotta can be a little bland so I added a scant amount of fresh grated nutmeg and served with blueberry sauce that I added a little nutmeg to as well. Helps a little to keep from cracking if you put a pan 1/2 full of water in the oven w/the cheesecake. Thanks for a lighter authentic cheesecake recipe!

Chocolate Orange Truffles

Took what seemed like forever for this to set and had a very runny consistancy even when set. I used small scoop, tried using my hands, they just melted almost immeditately and I couldn't dip or roll them. The upside was we melted the mixture back down and added a few cups of powdered sugar and poured into a 13x9 for FABULOUS FUDGE, was really good as a fudge. Gave as gifts for Christmas!

Amazing Italian Lemon Butter Chicken

This was super good, should be said though to keep the sauce separate until the very last second before serving. I comibined and kept on low heat to keep warm while company arrived and the sauce broke and tuned to straight butter, ended up pretty greasy instead of creamy. Added lots more lemon juice and zest than called for (really like lemon!) Still a great recipe!

Cream Cheese Cookies IV

Mmm Mmm...these turned out great. We have tried lots of variations, like butter pecan cake mix, adding rum flavored extract and chopped pecans! To say this batter is stiff is an UNderstatement, had to mix by hand, but totally worth it.

Really good base recipe, of course I tweak everything. I doubled the recipe and added lots of browned chorizo and the drippings the next day, yum! I did one can kidney beans and one black beans, it was super! ***Definitely better if you let flavors soak in overnight***
