Quick and Easy Brownies

Reviewed: Apr. 2, 2011
These brownies were great. The only changes I made were to cut the flour to 1 cup and add chocolate chips. They took 1 hour to bake in a 9 X 9 spring form pan. The brownie lovers in my family all felt these were cakey or lacking in chocolate flavor. Nice, dense, decadent and very chocolatey. Did I mention easy? Great recipe. Thanks for sharing.

Pumpkin Cheesecake

Reviewed: Jan. 17, 2011
This is a wonderful cheesecake recipe. My husband and my four year old son made this for me for my birthday. Their product was a little deflated, (it was their first cheesecake) but for as flat as it looked, it was delicious. I think that the tartness added by the sour cream topping is very balancing. They used pureed butternut squash from our garden this summer which worked out delightfully.

Molasses Sugar Cookies

Reviewed: Dec. 15, 2010
This is a great recipe for molasses spice cookies. Try them. Personal taste may add more or less spice but the cookies are awesome and the recipe is just too easy. Definitely a keeper. Thank you so much for sharing it.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 31, 2009
Delightful! I made mini muffins to go with spicy Texas chili. Yumm! Even better than cornbread for Halloween. I added chopped pecans which melded perfectly with the pumpkin and spice. Thankyou for the recipe.

German Apple Pancake

Reviewed: Jul. 25, 2009
Really delicious. Great recipe. Thanks. I added cinnamon, nutmeg and a dash of ground cloves to the batter. I used 2 tart apples and sauted them with butter and cinnamon and sugar. I uses a pie plate to bake and server and added brown sugar and cinnamon and nutmeg to the pie plate bottom before layering on the apples. We loved it.

Sauceless Garden Lasagna

Reviewed: Oct. 27, 2007
We loved this lasagna. I have to admit that I did not want to put in the balsamic, but I did anyway and what a fantastic taste. Like another reviewer said, it really sits lightly in the stomach rather weighing you down like most lasagna dinners. Thanks for passing this one along. I think this one will be a frequent meal at our house.

Indian Dahl with Spinach

Reviewed: Sep. 26, 2007
This dahl is so good and mild. I love the fresh spinach, which turns out so tender. My husband is going to love this, if I leave any for him. I did add half tsp of curry, I browned my onions and cooked all of the spices with my onion (except the garam masala). Instead of water, I used vegetable stock. This is such a keeper. Thanks for sharing this.

Bacon and Potato Soup

Reviewed: Sep. 18, 2007
This was so good. And I made it with vegetarian bacon and vegetable stock. Thank you for sharing that one, it is a keeper. With a handful of green onion on the top and a little more cheddar cheese, it is like a baked potato in a bowl. Yummy.

Smoky Black Beans

Reviewed: Sep. 18, 2007
I like the flavor of this recipe a lot, though it surprised me as I guess I was expecting something a little more southwest and it reminds me instead of Boston Baked Beans, only with turtle beans. For my own preferences I cut the sugar back to a tablespoon and added chipotle en adobo and a flick of fresh chopped cilantro. I'm sure it is great over chicken but, it is also wonderful with vegetarian protein substitutes like quorn.

Cinnamon Raisin Bread I

Reviewed: Sep. 9, 2007
What a great bread recipe! Like cake! I really don't like raisins much is baked goods but, I could eat this one all day. I tried it with canola oil instead of butter in the bread and it turned out beautiful. Thanks for sharing a great recipe.
