Caramel Shortbread Squares

Definitely put in the Candy category. This is not a cookie and seems like a fat cousin of a Twix bar on steroids. It was very rich and way too sweet for us. I really liked the caramel and plan to use it for other desserts and pies. I would also suggest using the Williams-Sonoma Scotch Shortbread recipe for those who found the "crust" to be dry and crumbling.

Apple Crisp

I added 1/4 cup of dried cranberries to apples which brought a really nice flavor to the apples. The crisp topping using walnuts and pecans is delicious and gives you slight variations as you eat it. It's really good. Perfect recipe for making indvidual apple crisps for dessert... or as we found out breakfast!

Broccoli Quiche with Mashed Potato Crust

My husband and I ate this entire thing in less than 24 hours... it is delicious. Also, I used the crust idea from this recipe to fix-up the quiche in another recipe... made this one with mushrooms and sundried tomatoes as suggested by one of the reviews. Used 6 eggs and had a little left that wouldn't fit in my dish. It is so good.

Mushroom Broccoli Quiche

I modified this recipe quite a bit. I used left over garlic mashed potatoes for the crust and used sharp cheddar cheese instead of swiss. I sauted the mushrooms and onions but also added one stalk of celery (finely chopped) and 1/2 cup of chopped sundried tomatoes. I was able to use more mushrooms and more broccoli because they reduced down while in the skillet. I'm really glad I listend to the comments about needing more eggs I ended up using 5 eggs.

Chocolate Oatmeal Cookies

We loved these cookies! I made a nutty version of them using leftover chopped walnuts & pecans, and substituted in 1/4 tsp of almond extract. I also used white and semisweet chocolate chips. Special thanks to the reviewer who mentioned that they won't "look done" but they are. Very true.

Butternut and Acorn Squash Soup

I didn't try the "full sugar" recipe because these squashes are already very sweet. I used very little brown sugar and added a bit of nutmeg and red pepper as suggested by other reviewers. Very good but plan to play with it. More to follow soon. Update - Definitely staying with the small amount of brown sugar and all the cream cheese, but doubled the onion, added a bit more salt/pepper and garnished with shredded cheddar cheese and scallions. The cheddar melts in the soup and makes it less "graceful" to eat but is so worth it!

Spanish Cod

This was just great! We had it with garlic mashed potatoes which went very well with the sauce. My husband who doesn’t like olives (at all) liked the flavor very much. The olives are not overpowering but add a bit of a salty taste. I can’t wait to try this sauce on chicken and even other types of fish.

Chicken Kiev

It definitely needs something – some kind of sauce with it. The breading could use a little kick as well. Is there such a thing as strongly bland? Perhaps my expectations were too high. I’m going to have to play with it a little more before I can say I would serve it to guests.

Spinach-Stuffed Flounder with Mushrooms and Feta

I agree with needing a lot more cheese which is not surprising coming from me. I also added garlic and some scalions which blend in very well with the spinach. This recipe works with blue cheese as well.

Buttermilk Pound Cake

I was in search for the perfect buttermilk pound cake and have been trying many recipes. This one was good but did not make the top of the list. It needed something with it - which if you're planning to serve it with some fruit, ice cream, or chocolaty sauce you should be fine.

Blackened Salmon Fillets

My family LOVED this dish! My mother, the home economics teacher, even requested the recipe! I served it over individual mixed greens salad, but everyone wanted more of it as their entree. It will steal the show!

Herbed Marinated Lamb Chops

I have never prepared lamb with this family of ingredients and wasn't sure we would like it. It is a very quick easy recipe but I agree that it is better to marinate it longer. I made it the night before and it was delicious - not too salty.

Indian Chicken Curry I

I would re-name this recipe and agree that this recipe was not quite the curry dish I hoped it would be. It is delicious as is and makes for great left-overs, but I would not classify it as curry.
