Quinoa Side Dish

I cooked the onion and garlic with the quinoa to add some extra flavor. There was just a flavor that was missing from this dish. When I warm it up tomorrow I'm going to try adding some cumin to it to spice it up.

Brown Sugar Brownies

I was a little skeptical about these seeing how thick my batter was but...I got non stop rave reviews. I added in a handful of semi sweet chocolate chips to give them some flavor. I also doubled this recipe and it just barely fit into a 9x13. These are RICH brownies. I topped them with caramel frosting from this website. DELICIOUS!

Eggless Peanut Butter Cookies

This really should be 4.5 stars. My BF asked me to make him PB cookies which is usually not a problem but I was out of eggs! Admittedly I was skeptical at first but they actually turned out great! I did use 1/4 cup of WW flour and for part of the sugar I substitutes honey and threw in a dash of vanilla. I also rolled these in sugar before flattening. Scaled to yield 12 cookies actually gave me a really large 2 dozen.

Baked Flan

I have avoided flan for years despite my love for this dessert. Well tonight I proved that I could make it! I thought I'd messed up royally because I just had a smear of crystallized sugar blob on the bottom of my pan. When it came out of the oven this golden liquid oozed out. It also only took mine 40ish minutes to bake. Good thing I checked. Thanks for boosting my confidence!

Honey Ginger Carrots

I added fresh ginger to these and it made all the difference in the world. Just a splash of this and a splash of that. I can't stand cooked carrots but these were fabulous.

My boyfriend adored this and took seconds, I on the other hand thought it was OK. It was a tad on the sweet side for me and I couldn't figure out the fishiness with the cinnamon. I served it on leftover naan bread from another recipe, that was definitely a good idea. Could use some tweaking and a good dose of red wine vinegar.

Garlic Potatoes

These were ridiculously easy! While my potatoes were draining I warmed a little melted butter and milk in the pan before returning the potatoes. Can't go wrong!

Ugly Duckling Cake II

Definitely a winner! My boyfriend isn't a fan of cake and he took two HUGE portions. One slight change for next time. Cut back a tad on the sauce it overwhelmed and nearly drowned my cake. It was done baking for me at 30 minutes. I poured the sauce on and popped it back in the oven for 5 minutes to brown to coconut. Fabulously easy! Thank you!

Chocolate Chip Banana Muffins

These came to the rescue when my other muffin recipe failed. The muffins seemed too dry so I added a pinch more oil and a dash of milk to give them some moisture. Because I'm a health nut I substituted the 3/4 flour for whole wheat and you couldn't taste the difference. These were moist and delicious and perfect for a Saturday morning.

Garlic Chicken

I'm a nanny and always on the lookout for easy recipes. Man was this a cinch and it made me look like a gourmet cook. The baking temp seemed too hot so I consulted the back of the Tyson box and reduced the heat to 350 degrees but kept the baking time the same. After placing the chicken in the pan I sprinkled some Italian seasoning and salt and pepper to give it some more added flavor. Served with pasta and sauce and a vegetable such as broccoli, you have an instant easy weeknight meal.

Jam Filled Butter Cookies

I took these into work and they were gone so fast I never had a chance to eat any of them. I kept getting stopped in the hallway by coworkers about the amazing cookies on the blue plate. One thing to remember is to pull them out even if they look half baked. I found getting the jam in was no big deal, just a few spoons and it was cinch. Delicious cookies, bound to give you rave reviews.

To Die For Blueberry Muffins

These were pretty good, but definitely needed some tweaks, and will need some in the future. First, don't fill these to the top, 2/3's full is plenty for big muffins. Second, add more blueberries and don't be afraid to pile on the crumble mixture. On the crumble note, definitely use brown sugar. You can substitute like I did half whole wheat flour and white flour in the batter, with out a taste difference. On the whole, a great base of a recipe that just needed a few tweaks.

Vegan Brownies

By far my favorite brownie recipe, don't tell your friends and they'll never know it's vegan. Two things, I cut the sugar down by almost half and you can't tell the difference. Also out of personal preference and nagging from friends I cut the time down by 10 minutes we all prefer a half baked brownie. MMMM delicious and soo easy.

Greek Chicken Pasta

Delicious! I've made this for a couple of occasions and most recently for a group of friends. It easily fed 7 hungry college students. Be sure to prep ahead of time or get some help. I like my ingredients finely chopped so it takes me a while. I also add more feta than called for (it's my favorite cheese), a whole lemon juiced and some of the marinade from the artichokes. You have to remember that this is not a saucy dish, but it is rich in a lemony flavor. I get rave reviews for this all the time. Try a little tinkering with this and you won't be disappointed!

No Bake Cookies III

These aren't the same as what my mom made, but with a few changes they get close. My mom never used peanut butter, so I made a few changes. I substituted the PB for extra cocoa in the initial boil as well as reduced the amount of sugar. The trick is to wait for a real rapid boil to start your timer for one minute. Then I added my oats ( I only had the old fashioned kind, so I had to let them cook in the mixture for a minute or two) and about a 1/4 cup of chocolate chips. Mine didn't need wax paper, I just plopped them on a plate and stuck them in the fridge while I made dinner. Never really formed perfectly, but they are still a little taste of heaven. MMMM

Easy Chicken Enchiladas

I made these for my guy friends (2 of them) and they were nearly gone. I just stuffed the dickens out of the tortillas and crammed them in the pan. I took the advice of other posters and added enchilada sauce on the top and bottom to keep them moist. SO DELICIOUS! OLE!

Easy Apple Crisp with Honey

I've never really made this before so I was a bit apprehensive at first. To simplify the peeling process I used a vegetable peeler and an apple slicer, that was a huge help. The dough didn't work very well and when I took it out of the oven it was still not completely baked but it turned out well in the end.

Eggplant Parmesan I

I was so nervous to make this as I have never attempted a dish quite like this one. So, I kind of made it up as I went along. While I was preparing other ingredients I simply stacked in one layer the eggplant slices between layers of paper towels. Then when it came time to cook them I dipped them in egg and coated with Italian seasoned breadcrumbs and cooked in a lot of olive oil and again sandwiched them between paper towels. I needed more sauce then what was called for but then again I was kind of making it up as I went along. This was a surprise dinner for my dad and he and the whole family included loved it, not bad for my first time! Thanks so much for making this scary dish sooo easy!!! DO serve with garlic bread and a salad..

Spinach and Feta Pita Bake

Whenever I need something simple for a lunch gathering, this is what I make. I usually have all the ingredients on hand and I get rave reviews. I use regular pesto, or my mom's homemade and I don't usually have mushrooms on hand, but it still turns out fantastic! I couldn't be happier with such an amazing recipe. Besides, anything with feta is good in my book. ; )

Fiesta Fry Pan Dinner

I'm a nanny for three young kids, and when I can get all three to eat something it's a miracle! This was the simplest thing to make, I usually omit the onion as most my family member don't like it. So easy for a week night. I recommend it to all of my mom friends. Thank you thank you!
