Mediterranean Salmon

This recipe is superb!!! My kids and I loved it, and I know my husband will love it too!! I did cut back on the olive oil. (used about 1/4 - 1/3 cup instead) Didn't have cliantro so I used Italian Parsley in it's place. EXCELLENT!!!

No Bake Sugar Free Cheese Cake

this was a great dessert. I added a little extra cream cheese and used sugar-free raspberry jello instead of the lemon. I also made my own whipped topping with heavy whipping cream and Splenda. It was a hit!

The Best Meatloaf

My husband who despised meatloaf loved this recipe and has requested that I make it again! The first time I made it we did not have any green pepper so I substituted chopped mushrooms for the green pepper and it was great. I had to cut back on the mils as it was a little soggy and had to bake it about 30 minutes extra to get it firmed up.
