Mexican Casserole

We didn't love this. The chicken to vegetable ratio seems way off to me, I probably would add two more cans of beans and twice the corn. Bell peppers too. Also seems like the oven baking is unnecessary, cheese can melt on the stove. Anyways, we didn't like this more than chicken tacos or burritos and it was the same amount of effort. Would not recommend.

Exquisite Pizza Sauce

I thought this was grossly sweet and strangely spicy. Definitely distracted from an otherwise great pizza experience. Would not recommend.

Joey's Peanut Butter Cookies

These cookies had an outstanding flavor, for sure. I used crunchy peanut butter, but that was my only substitution. I had trouble getting the right consistency baking these cookies, but I followed other's suggestions, so it's not necessarily the fault of this recipe. Would definitely try to make again!

I've never made pecan pie before (and I've only had it once) and this turned out perfect. I followed the advice of others and added some vanilla and cinnamon and it was great.

Candied Sweet Potatoes

As someone who likes my sweet potatoes sweet, these were excellent. I used apple juice because it's what I had. The brown sugar got nice and syrupy, and they reheated well. Great recipe, and I can't wait to try it with maple cream.

Black Bean and Salsa Soup

This soup was so easy! It came together real fast in a blender. I took the advice of others and added some lime juice, and left some beans to be added whole. I used fajita seasoning instead of the cumin, and added some cheese when I ate it. Excellent. The one thing I'm unhappy with (and not the recipe's fault) is that most of the flavor comes from the salsa (makes sense). Next time I make this I will get some garden fresh salsa or something, because I'm not a huge fan of sweet jar salsas.

Orange Party Punch

I don't care for pineapple, but people seemed to like this recipe. WARNING: I would not recommend using pineapple sherbert for this recipe because the sherbert we used had pineapple chunks which made the texture strange and the punch not so good. Stick with orange.

Pumpkin Pancakes

These had a good pumpkin taste and an ok texture. They're not super sweet, so if you like that, sprinkle them with sugar and cinnamon, or eat them with syrup. Half a batch made me about 8 4-inch pancakes. Would definitely make again! Also, they freeze well and are excellent upon reheating.

Hot Cocoa Mix in a Jar

It has a weird, almost salty taste that I'm attributing to the powdered milk. I used "non-fat dry milk", but I don't know if this was correct. I will probably throw the rest of the batch out.

Easy Alfredo Sauce I

Right now I'm giving this 4 stars. It tasted phenomenal (I added a little garlic), but the texture wasn't quite what I wanted. I added the parmesan in 1/2 cups, but I couldn't get it all to melt down- I still had little parmesan pieces in the sauce, and it seemed a little runny. I added some cornstarch and ran it through the blender and it turned out satiny smooth and thick. Lovely. PS- this is amazing over gnocchi.

Garlic Chicken

This recipe was easy to make and the chicken had a great texture. My breadcrumbs didn't get quite crunchy, so maybe I would turn down the oven next time. The garlic flavor isn't strong, so add some garlic powder to the crumb mixture for more flavor.

Creamy Cheddar Cheese Soup

I have 3 1/2 lb blocks of frozen cheese that just crumble into 100000 little bits when thawed, and this was a perfect way to use some of that cheese. I liked the texture and the soup kept well in the refrigerator. I also mixed in some leftover nacho beef and made nacho soup!

Creamy Hot Chocolate

Very sweet hot chocolate. I made it with whole milk, and with the addition of marshmallows it is very creamy. I would make again, but would like a deeper chocolate flavor.

Marshmallow Treats

From somewhere deep within me, I realized I love Crispy Rice Treats and this recipe is the perfect consistency. I added a bit of vanilla and then covered with melted chocolate and sprinkles and it was awesome.

Iced Pumpkin Cookies

This is a light fluffy cookie that totally satisfied my pumpkin fix! I mixed in a bag of white chocolate chips instead of icing the cookies and used 1 c. white and .5 c. brown sugars. For spices I added 1 teaspoon cinnamon, 1.5 teaspoons pumpkin pie spice, and 1/2 a teaspoon of chai spice. Yum!
