Cathie's Clam Chowder

The bacon needs to be fried crisp before adding the veggies. I had to skim fatty pieces of bacon off of the top. I added carrots and I boiled potatoes in the juice mixture until they were fork tender and then I added light cream instead of half and half. I used 3 cans of clams as well.

Wild Rice Salad

I served this at a party with small slices of pumpernickel bread and it all went. I didn't particularly enjoy it, but everyone else did. I omitted the green onion because I simply didn't have any and I think it would've been over the top if I hadn't.

Boston Cream Pie III

I used a different cake recipe and this pastry cream recipe. Blah! Not thick enough by any means. It seeped out the side and ran all over the place. It was ugly, but tasted great.

Coconut Cake II

I used coconut milk and I added crushed pineapple and garnished with pineapple rings, marachino cherries, and coconut flakes. The icing was out of this world!

Marinated Slaw

I put the veggies through the food processor until finely ground and added a carrot and celery seed to the dressing. I also soaked the veggies for an hour in salted cold water and drained them before adding the dressing to keep it crispy.

Almond Brownie Bread Pudding

I had to nix the almonds at the last minute. My daughter decided that she didn't like almonds and my husband threatened to pick them out. I sprinkled them over the top of mine. Delish! Great warm out of the oven or cold from the fridge.

Red Wine Cake

I thought it would need icing, but it was nice and moist. I used my home made Christmas wine and the cake had a little more kick. The chocolate chips make the cake. Next time I want to try white chocolate chips.

Make Ahead Breakfast Casserole

I had to omit the spinach and I only used one kind of cheese. I also used cooked chopped breakfast sausage. I also used Pepperidge Farms Herbed stuffing instead of croutons. I loved it. I wouldn't make again unless there are more people to feed because the leftovers weren't that great.

Burgundy Roast Beef with Savory Sauce

Nice over all flavor. I used a real burgundy because I would never use a wine I wouldn't drink. Tasted cooking wine lately? It makes a beautiful presentation when crafted properly, but can also easily turn into an ugly mess.

Awesome Sausage, Apple and Cranberry Stuffing

This stuffing is great for Thanksgiving. It's time consuming so I wouldn't make it unless it's a special occasion. I didn't stuff the bird this year so I added 1/2 cup more stock and an egg and I baked it in a 13X9X2 dish covered until it reached internal temp. of 165.
