Coconut Cake II

I used coconut milk and I added crushed pineapple and garnished with pineapple rings, marachino cherries, and coconut flakes. The icing was out of this world!

Special Irish Beef Stew

Sour Cream Chicken Enchiladas

I used regular salsa and canned chillies. Then I added extra sour cream and salsa to sauce and salsa and chillies to chicken mixture. Really great recipe!

Scalloped Potatoes and Onions

I added a dash of Worchester sauce and hot pepper sauce. I also melted about a cup of shredded cheddar cheese in the sauce. I guess that makes them Au Gratin? Tasty!

Very, Very, Very Good Cheesecake

Very rich! Duh, it's cheesecake. This technique is the best I've used. I don't know what the towel is for, but who cares? It works. The only thing is to dip the knife in warm water before cutting each piece. It gets a little messy. I didn't and my presentation sucked but no one cared because it tasted so good.

Skillet Pork Chops with Potatoes and Onion

Fusion Chicken

Awesome texture and flavor. I used dried cilantro and regular salsa. Would have been much better with fresh cilantro and salsa verde. I served mine over rice with a side of broccoli. It was a nice light dish.

Cathie's Clam Chowder

The bacon needs to be fried crisp before adding the veggies. I had to skim fatty pieces of bacon off of the top. I added carrots and I boiled potatoes in the juice mixture until they were fork tender and then I added light cream instead of half and half. I used 3 cans of clams as well.

Marinated Slaw

I put the veggies through the food processor until finely ground and added a carrot and celery seed to the dressing. I also soaked the veggies for an hour in salted cold water and drained them before adding the dressing to keep it crispy.

Spaghetti Pizza Lasagna

I think it needs a little more sauce. I added galic and the spices named to the meat and to the cassarole itself. Very different and easy. Different things can easily be substituted for picky eaters or something different.
