Wild Rice Salad

I served this at a party with small slices of pumpernickel bread and it all went. I didn't particularly enjoy it, but everyone else did. I omitted the green onion because I simply didn't have any and I think it would've been over the top if I hadn't.

Porcupines

These were great! The whole family loved them! I subbed meatloaf mix (ground beef, pork, and veal) instead of just beef, and minced garlic instead of powder. Next time I'll try baking them in cream of mushroom soup. I was a little skeptical using uncooked rice. I always use cooked rice for filler. The uncooked rice worked out perfectly and the rice poked out of the meatballs making the name porcupines very appropriate.

Burgundy Roast Beef with Savory Sauce

Nice over all flavor. I used a real burgundy because I would never use a wine I wouldn't drink. Tasted cooking wine lately? It makes a beautiful presentation when crafted properly, but can also easily turn into an ugly mess.

Boston Cream Pie II

I only used the cake recipe for this one and the pastry cream of another one. The cake was superb, the pastry cream wasn't thick enough and ran all over the place. Next time, when I have an entire day to devote to Boston cream pie, I will use this pastry cream recipe, although I find the technique a little odd.

I used a different cake recipe and this pastry cream recipe. Blah! Not thick enough by any means. It seeped out the side and ran all over the place. It was ugly, but tasted great.

Mexican Style Shredded Pork

I used 3 lb. of center cut pork chops cubed. Great flavor! I felt it could have used an onion chopped in the crock pot. I omitted the rice and served it like a pork bbq on buns with chipotle sauce on the side to add as needed.

Chicken Marsala with Basil and Mushroom

Great marsala recipe! I doubled the sauce because I like to serve it over noodles, and I added minced onion and garlic about 2 minutes before the mushrooms. I thought it could have been a little thicker, so next time I will stream in a cornstarch and water mixture at the end until it's the perfect consistency.

Bolognese Sauce

This is the best sauce I've ever made! I flavored the meats while I browned them with a little salt, pepper, onion powder, and garlic powder. I also added a tablespoon of sugar and a bay leaf. I thought there'd be a layer of grease on the top from the bacon grease but there wasn't. I fried the bacon and removed it before adding to the sauce as per another member's suggestion. Ab Fab, Darling! Bravo!!

Chocolate Chip Cookies I

They turned out nice. I will use margarine or butter flavored shortening next time. No walnuts for me, either. Also, bake at 325 degrees for 9 minutes so they don't burn on the bottom.

Wonderful formula for perfectly cooked rice. Needs a little hot sauce. I added a couple of packets of sazon for flavor and color. I also added a can of chopped chilies.

Pillow-Soft Dinner Rolls
