Delicious Pineapple Muffins
This is a wonderful recipe! My fiancee bought chunk pineapple instead, so I had to slice it up first, but it was well worth the extra effort! I also used an entire teaspoon of cinnamon, and followed another reviewer's suggestion to NOT melt the butter in the topping - the room temperature butter made the topping mixture great! SO good, I will double the recipe next time so we can have some to freeze or give away~ Thanks for such a delicious recipe!

Baked Pork Chops I
it was okay, but nothing to write home about. The pork chops were very tender, yes, but they just tasted kind of "blah", so it's a good thing there was the gravy to cover it up with, or it would have been "blah" by itself. I liked the pan-frying first, that seemed to hold the breading on more than I've had in the past, I must say! I had four pork chops for this recipe, cooked scalloped potatoes along with it, with corn and rolls; looked great, excellent presentation, but the flavor of the meat was just not there! Maybe more spices are needed?

Breakfast Upside Down Cake
This was great! I made it for my wonderful manfriend (he's NOT a boy) and his mother - we all thought it was soooo good!! I added two more eggs like another note suggested; also used a tad bit more milk. I didn't chop the onions too finely, and used garlic powder in addition to the onions. I did grate the potatoes, but used 3, as called for. OH! I decided to use sliced sweet honey ham instead of the bacon, and it was very very good that way too! This is a recipe which can make many people happy: potato fans, egg fans, and whatever kind of meat you have available, I'm sure sausage would work well too~ I think with the additional 2 eggs, the time to cook is extended by five minutes, it was great!!!
