Venison Meat Loaf

Guess I can't really rate this fairly since I made a change or two....but wanted to share what I did because it turned out well. I followed recipe amounts, but did saute my onions before adding to the mixture. I also added a packet of Lipton onion soup mix to the meat mixture. This added alot of flavor! Lastly, I baked this in muffin tins, so if was mini-meatloaves instead of one big loaf. You can freeze leftovers so much easier this way! It made about 14-16 mini loaves. Baked them at 375 degrees for 18 minutes or so.

Baked Rigatoni with Italian Sausage and Fennel

This was so good! I used italian chicken sausage to cut some fat/calories, but otherwise followed the recipe. My suggestion would be to use the best cheese you can afford to buy as this really made the difference in my opinion.

Santa Fe Chicken

I used instant brown rice instead of white and it turned out terrible! The rice on top was cooked, but on the bottom it was still crunchy. This had a great flavor, but if I try brown rice again I will increase the liquid or decrease the amount of rice called for.

Black Bean Soft Tacos

This was just okay for me, although my husband and daughter liked it. I thought the chili powder and cumin overpowered the taste of the other ingredients. If I make this again I will decrease those spices for certain.

Tuscan Soup

This soup has excellent flavor to have so few ingredients! The only changes I made were as follows: I used turkey sausage, reduced sodium chicken broth and added 2 cloves of minced garlic when sauteeing the sausage and onions. Great!

Savory Kale, Cannellini Bean, and Potato Soup

This was great soup...I followed recipe exactly, but added a little more kale than it called for, and also sauteed one link of turkey kielbasa sausage with the onion. This was the perfect compliment to an already great recipe.

Easy Pancakes

These turned out great - I tweaked just a little: tripled the recipe and used 1/3 whole wheat flour, 3 T brown sugar and 3 T white sugar and added 2 tsp of vanilla extract.

Cabbage Soup II

So good...used smoked turkey in place of the ham and sauteed veggies prior to placing them in the pot with everything else. Added two bay leaves to simmer with the soup. Awesome.

Easy Refrigerator Pickles

I followed the recipe exactly and they have a good flavor. Next time I will definitely slice the cucumbers much thicker! Thanks for the easy recipe and great way to use up a ton of cucumbers in my fridge!

Cherry Chicken Salad

I don't usually like to rate recipes that I've altered...but this turned out great so I had to share: I omitted the buttermilk and subbed a 6oz container of plain greek yogurt for the mayo which slashed the fat and calorie content, but b/c I used greek yogurt it did not compromise the flavor or texture. I also used craisins instead of cherries, cashews in place of the pecans. I also used seasoned salt to taste and added about 1.5 teaspoons each of fresh chopped thyme and rosemary. This gave it such a bright flavor! My husband said this was the best chicken salad I've made and I've tried ALOT of recipes.

Carrots with Dried Cherries

SO easy and really good. We like carrots and did not think it was too sweet. Only change I made was to use cranberries instead of cherries because it's what I had on hand.

Venison Pot Roast

I guess I can't really rate this fairly since I cooked it in the crokpot - but otherwise I followed the recipe exactly. I let it cook on low for 6 hours and the meat was really tough. It had a pretty good flavor, though. Next time I'll try it on the stove in my Dutch oven.

Breakfast Casserole III

Followed the recipe to the T...just okay for me. I thought it had way too many potatoes. It might be better if done with shredded potatoes. Will probably look for another breakfast casserole recipe the next time I make one.

Pasta with Spinach Pesto Sauce

I was pleasantly suprised at how good this was! Followed the recipe to the T, and will definitely make again - even my little ones liked it! (I did use baby spinach though, which has a much milder flavor!)

This was SO good! Followed the recipe as is and it is perfect. Presentation was beautiful - great Fall colors! Make sure you do use fresh herbs though - it's a must!

Quick and Easy Vegetable Soup

This had a great flavor, however the next time I might just use half the vegetable juice it called for. That flavor was predominant. It is a good base to use and then add whatever vegetables you have on hand.
