Manicotti

Quick and easy! I partially cooked the manicotti in hot water, used Italian cheese blend instead of mozzarella and was quite liberal with Italian seasoning instead of just parsley. Also, the jar of sauce I had was the larger 24 ounce size and I went with the entire thing! Extra saucy and soaked into the manicotti nicely, too!

Roasted Portobello Mushrooms with Blue Cheese

Yum! Love portobellos. Love blue cheese. Love this recipe! I was out of soy sauce but I used Worcestershire sauce with a little bit of garlic salt. Delicious!

Peanut Noodles

Wonderful! Used low-sodium soy and added a couple cloves of garlic. Next time I'll probably use hot chili oil instead of red pepper flakes and rice vinegar instead of cider vinegar and chunky peanut butter for texture. It will be a great base to add chicken or vegetables. These are ingredients I always have in the house so it's great for a quick and easy meal!

Prosciutto and Parmesan Pinwheels

I thought this was simple and delicious! You can definitely prep ahead of time, wrap in cling wrap and store it in the refrigerator until ready to cut, cook, and serve. I prefer cutting it thinner (1/2 inch) for appetizers. I've been known, however, to make and cut into the 1-inch slices for lunch along with a spring green salad! After reading the other reviews, I like the suggestion of brushing the pastry sheets with olive oil and garlic instead of the mustard... and actually, I may try some pesto next time!

Absolutely great recipe! Quick and easy and totally delicious! I used Stilton Blue (and close to twice the amount called for) and it was fabulous. I made enough leftovers for lunch this week and I'm loving it every day!
