This was a super easy and good recipe.. I used Orzo pasta as my toddler really likes it. I just cooked the pasta and added a bit of lemon juice to the whole thing.

Old Fashioned Potato Salad

So i made this salad for a birthday party in which the guest of honor loved potato salad! My family were not so fond of potato salad until i made this... SO GOOD!!! i have since made it 3 more times, we LOVE it!!

Tofu Parmigiana

This recipe is AWESOME!!! I followed another person's suggestion to just push the tofu in the bread crumbs, then spray with cooking spray and coat them again. I was going to bread them normally but i was out of eggs. They baked up nice and crispy and my husband and I really loved the end result. This was the first time my husband really liked a tofu dish!!

Speedy Homemade Salsa

The best salsa for sure. We will NEVER buy jars of salsa again. This was easy and i used a can of diced tomatoes which made it even easier to whip up in under 10 minutes!

Apple Squares

These are wonderful! I doubled everything except the topping as others suggested and used 3 apples ( 2 1/2) cups) as well as only using 1/2 cup of each sugar both times that i've made this. It is really, really good! The healthy version of a brownie!!

Waffles I

Loved these..i mixed them up the night before! This recipe makes way more than 6 waffles though. I made a double batch for our family's Easter brunch and i made more than 20 in my cusinart waffle iron.

Basic Pasta

My husband and I have started making our own pasta.. and this basic recipe is wonderful.. although you really have to flour the SNOT out of it to keep it from sticking into a huge clump.

Banana Muffins with a Crunch

These were super awesome, and I made all the changes suggested by other reviewers to make them healthier. I used 1 cup of whole wheat flour, 2 of all purpose, I used 1/2 cup white sugar and 1/2 cup of brown. I only used 1/2 cup of melted butter, and 1/2 cup applesauce. I mixed dry ing, then added butter, then wet, then at the end I added the coconut, finely chopped pecans :) and some finely shredded carrot and a smidge of mini chocolate chips.. they were awesome, and on the healthy side for my 2 year old.

i used 1/2 cup of butter, 1/2 cup of cocoa , 2 cups of sugar and 1 can of evaporated milk..boiled for 10 minutes and it was amazing..it thickens after it cools..

Roasted Tomatillo and Garlic Salsa

Wonderful salsa verde! Be warned that 2 jalapeno peppers still makes for a hot salsa. We like spicy food in our house and I would only use 1 jalapeno next time. I felt that by using 2 the hotness overpowered the flavour a bit.

Garlic Broccoli

My husband said this is his new favourite way to eat broccoli... and that is saying a lot!!! I used 2 cloves of garlic and kept everything else the same. We wanted to eat this right away.. so i mixed it up.. microwaved for 1 1/2 minutes and then put in the fridge.. it was much faster than blanching, and the flavours were wonderful.. done everything in 30 mins.
