Greek Pasta Salad

The BEST! I have never been able to make pasta salad--always comes out too dry or blah or something. This turned out great and everyone loved it!

Beef or Chicken Enchiladas

I LOVE this recipe. I use it over and over. It is just the enchilada recipe I've been searching for for years. In so many recipes the sauce is tomato based, and I'm not sure how authentic that is. Whether it is or no, I'm sold on this one. Thank you thank you!

Pear-a-dise Muffins

I actually really liked this recipe. We eat no sugar and I only use sprouted wheat flour, so not every recipe works. I used sprouted wheat flour, doubled the spices, and added 3/4 t. vanilla. I also used melted butter instead of oil. I used several small, over ripe fresh pears. The resulting muffins were very moist and I told my family they were mini pear puddings and we ate them with spoons. They loved them!
