Green Smoothie

Fantastic! The only changes I made: home squeezed orange juice instead of store bought, and almond milk instead of regular. I also didn't have flex seeds to add in. It turned out delicious, I will be adding it to my usual breakfast rotation.

My hubby enjoyed this dish and had seconds. This may have had something to do with my one modification to the recipe - I added a good splash of wiskey to the sauce.

Chicken with Mushrooms, Prosciutto, and Cream Sauce

I made this for my stepmother and dad. They said it was so-so (dad recommended wrapping it in bacon instead). I marinated the chicken in beer for an hour before cooking. I will be making this again at home.

Honey Rice

This was a great way to use my left-over brown rice! I added dried cranberries instead of rasins, fat free milk and a bit of vanilla, but skipped the lemon (didn't have any around the house). I also put in two tsp dissolved corn starch for thickness. Turned out great for a light dinner, and a fabulous pre-workout breakfast. This pudding was creamy, sweet and filling.

Cherry Tomatoes Filled with Goat Cheese

My DH did not like it. He ate one, made a face, and said, wow, the herbs taste really... fresh. Instead of stuffing the rest of the cherry tomatoes I left the feta mixture as a dip, and it didn't make it to the party... 'cause I ate it. It tastes like summer in a bite! I will be making more, and not sharing any with the DH!

Cranberry Apple Raisin Stuffing

I used left-over challah bread and my own home-made cranberry sauce. The stuffing turned out really not sweet enough for my taste, and I am sorry to have wasted my good cranberry sauce. Maybe it would taste better stuffed inside the turkey?

Simple Lemon Herb Chicken

Since I usually cannot leave good enough alone, I fudged with the recipie. I did not have lemons, so I added a lime instead, and added some less-sodium soy sauce. After the chicken was done, I shredded the breasts, threw them back in the frying pan with half a cup of veggie stir fry mix and half a cup of cooked wild rice mix. Yum.

Stuffed Mushrooms I

Hmm. Ran into problems making this one. The filling turned out runny, and the mushrooms soggy from their juices. The hubby however cheerfully inhaled the whole tray full, so I will be making this again. Next time I think I will put less filling in each mushroom, and add cheese on top

Port And Mushroom Sauce Chicken

yummy! My husband doesnt like chicken, but he loved this recipie. I didn't have fresh mushrooms on hand, but it still turned out delectable with a bit of brown rice and a nice salad.
