Curried Butternut Squash and Pear Soup

Made this for a ladies lunch date and impressed my friends! They were also happy with the swirl of coconut milk I added before putting on the sprinkle of nutmeg just before serving. Fantastic flavors and a light texture. Lovely.

Quinoa Tabbouleh

I loved the way the quinoa came out using this method! I will do it that way from now on. I'm not sure if I liked the carrots in this salad, they kind of took over (I grated them finely) and it seemed inconsistent with all the other neatly diced vegetables. They tasted good, though!

Avocado-Shrimp Salad

I've made this twice now and I just love how easy it is to put together and how delicious it tastes! I thought I'd suggest a variation I tried and liked - I added about a cup of cooked brown rice to the salad. I thought it worked well and added some healthy whole grain carbs - it was more satisfying that way for me. Thanks for this quick, easy, and delicious lunch idea. (I just love the picture, by the way - but my salad looks a little less professional when I fix it!)

No-Bake Granola Bars

I will not have to wait for sales on granola bars any more!! To make sure the mix stuck together I added about a half a cup of mini marshmallows to the sugar and syrup mix and heated the peanut butter together with them. I didn't wait till it cooled to add chocolate chips but put the hot mix straight into the lined pan and then pressed the chocolate chips into the top after it was set awhile. Thanks to everyone who made such great suggestions. Here's one more, for a bit of extra texture, and nutrition, I added about a quarter cup of dry milk powder to the cereal mix.

Hot Bean Dip

This dip was a hit on Fathers' Day when I made it for the family dinner. (By the way, subbing plain yougurt for the sour cream didn't affect the outcome for the worse.) My husband was very careful to make sure he knew where the left overs were and can report that it does keep well for a day or two - it was all eaten by then!

Affy Tapple Salad

This simple salad has a very appealing subtle flavor that works very well with a meal or as a dessert. Since my family doesn't care for nuts I used raisins instead and we really enjoyed the results. We'll make this again!!

Fragrant Lemon Chicken

This made the whole house smell great as it cooked through the day! It went together quickly and made a nice meal. I thickened the juices with flour and seasoned with salt and pepper to taste and we had nice gravy to go along with the chicken and mashed potatoes. Thanks for the great recipe!

Cottage Cheese Chicken Enchiladas

I made this with flour tortillas and skipped the green chilles and we loved it. I wouldn't have know there was cottage cheese in them if I hadn't put it there myself. It was too spicy for our little children but tasted delightfully Mexican to my Mexican-food loving husband. We'll make this again for sure.

Caramelized Baked Chicken

We usually have to tell our daughter a dozen times in a meal to eat her food. I made this and she not only ate it, she asked for more!! My husband said he'd eat this all day if it were served at an all you can eat buffet. Needless to say, we'll make it again. I wonder if mine didn't caramelize either because I used creamed honey and perhaps liquid honey gives a different result. The sauce would be fantastic over rice. Sticky or not, it won't go to waste. THANKS!!

Absolutely the Best Chocolate Chip Cookies

I was taken in by the name and the positive reviews and had to try this recipe. It was very easy to make and the cookies were very well recieved. In fact, I took them to a party and the kids there liked them so well they ate all of them leaving lots of other kinds of cookies on the counter to be left overs. I thought they were a little too sticky because they flattend out a LOT as they cooled so I will probably do what another reviewer of the recipe did and add about a 1/2 cup more flour the next time I make them so they keep their shape a bit better. Definitely a keeper! Thanks : )
