Iced Pumpkin Cookies

These are positively DELICIOUS! I'm not big on cakey cookies but these were SO soft and full of flavor! I took some to a pumpkin carving part and got lots of compliments -- people asked for some to take home!! I, like many other reviewers, doubled the spices and added a teaspoon of ground ginger. I used cream cheese frosting on top because I had some I needed to get rid of. It was tasty, but I'll try the glaze next time, because the frosting made them pretty messy.

Oma's Cottage Cheesecake

This is a nice, light pie. It could use a little more flavor, but still a nice treat. I used Splenda instead of sugar and baked it in a pie pan.

Cabbage Sloppy Joes

These were tasty! I loved the cabbage. As a vegetarian, I used GimmeLean Ground Beef Style as a meat replacement and it worked out great. The only thing I would change is use less brown sugar in the sauce. It was almost too sweet. Maybe just two tbsp of sugar.

Best Broccoli Cheddar Soup

This was tasty and SO easy to make! I couldn't find cauliflower soup mix, so I used a leek soup mix. I think my expectations were a little off, because I was expecting it to me like a more tradition cheddar/broccoli soup. The flavor was great, but the consistency was just a little too broccoli-heavy. I'll probably make this again with a few modifications, because it's hard to find something so flavorful that can be made so fast!

Fresh Ginger Cookies

I made these for a birthday party, along with some other, what I would call more "flashy" cookies. These were the first to go and I got so many compliments on them. I loved how soft and chewy they turned out. I can't wait to wow people with these at upcoming holiday parties!

Curried Cashew, Pear, and Grape Salad

This is one spicy, delicious salad!! I'm eating my second serving as I type. I omitted the bacon and followed others' suggestions and only used 1/4 cup olive oil. I've already phoned the husband to tell him he's in for a tasty treat when he gets home from work.

Chicken Pesto Pizza

I'm a big pesto lover, and this is so good! I used Quorn cutlets (substitute chicken) because I'm vegetarian, and mozzarella, because I'm too lazy to grate my own cheese. :) I made it with the Amazing Whole Wheat Pizza Crust recipe from this site, and it was a great combo. Will definitely make this again!

Amazing Whole Wheat Pizza Crust

This was absolutely wonderful! Next time I will half the recipe for a thinner crust -- the thicker crust was just tad too bread-y for our tastes. I used the Chicken Pesto pizza recipe from this site for toppings and it was simply delish!

Chocolate Mint Candies Cookies

These were my contribution to a Labor Day potluck and they were simply devoured! I got so, so many compliments on them. We put them in the freezer for a couple of hours before serving and it really gave the mint flavor a kick!

Vegetarian Meatloaf with Vegetables

This was delicious, and a big hit with my meat eating husband. I also used the ketchup/brown sugar sauce on top and cooked it in a loaf pan without the vegetables. I will definitely make this again. My only complaint is that the loaf was very crumbly -- we had to use a spoon to get it out. Maybe I should add another egg next time?
