Chocolate Strawberries

What a quick & easy way to make a big impression! I melted Hersey's Special Dark and Ghirardelli Bittersweet morsels in a large glass measuring cup in the micro. (I had alot of strawberries to dip!) After dipping I placed the strawberries in large disposable Reynolds cake tins, lined with parchment, then popped them into the fridge for a while. Right before leaving the house, I lightly dusted them with powdered sugar for a little oomph. They were a huge hit with my daughters track team! Next time I'll try drizzling white chocolate over the dark...I'm so glad i tried this recipe!

Middle Eastern Rice with Black Beans and Chickpeas

Oh my YES!!! This is delicious! I used ground pork and seasoned it as it cooked. I doubled the spices, used a tad less stock, and omitted the pine nuts. I dressed it with yoghurt tinged with lime, cayenne, and cumin...WONDERFUL!!! And soooo healthy!!! Thanks you for sharing this GREAT recipe!!!

Nat and Darcy's Amazing Eggplant Lasagna

I tried this recipe exactly as written, and have to say that I too found the eggplant waaay too salty. I also didn't care for the bacon in this recipe, although my husband liked it. I made it again, leaving out the bacon. And instead of salting the eggplant, I peeled and sliced it, spread it on an oiled pie plate and nuked til soft, about 4 minutes. Perfecto!!!!

Thin Mint Crackers

These have been added to my Christmas cookie list!!! So delicious and unbelievably SIMPLE!!! I sprinkled them with colored sprinkles for a festive touch. Definitely follow the advice regarding melting the chocolate completely before adding the peppermint extract. I did and it turned out perfect. One more note...PEPPERMINT EXTRACT IS HIGHLY FLAMMABLE!!!! A tiny bit dribbled over my pan and caught on fire. The flames licked right up over the edge into the pan! The flames blew out easily and had no effect on the flavor, but please be careful!

Hot Chocolate Mix II

As written, this recipe is worthy of giving as a gift for the holidays. But, a couple of alterations put it over the top! I added a box of instant pudding as suggested by others, which gave it a wonderful creaminess. I also threw in a little Herseys Special Dark baking cocoa...WONDERFUL! I whizzed it in the food processor for a bit, to give it a nice smooth consistency. It dissolves nicely that way. This is a gift, so I taste~tested a cup before shipping, adding a sprinkle of cinnamon to my cup...Soooo good! I'm sending this with mini marshmallows and coconut macaroons III from this site. Merry merry!

Vegetable Dill Dip

I make ALOT of recipes from this site, and I can truly say that this dip is one of the BEST!!! I could not find beau monde, so I used Old Bay as suggested by another. I put a couple dollops of it on some shredded cabbage and WOW, it was sooooo good! I ate it with a pretzel...fabulous! A red pepper strip, a radish, a green bean...delicious! But get this....I used it as a dip for buffalo wings...OH LORD! Soooo good! I am so glad I found this recipe. My family and friends love it, and it has become my "go~to" dip recipe. Thanks!!!

Grandmother's Buttermilk Cornbread

Truly a New England version of corn bread, it is sweet, moist and oh so yummy! I made this 2 nites in a row, it's that good. It's a perfect accompaniament to soups, stews, chowders, pasta and sauce, casseroles, fried chicken and mashed potatoes, scrambled eggs and bacon, baked beans and slaw...tonite it sides with american chop suey and salad. I wanted to add that while I almost always tweak a recipe to suit my tastes, I made this recipe exactly as written, beacuse it needs NO alterations. It is my new 'go to' corn bread recipe! PS~~~I'm thinking of following the suggestion another reviewer, and baking and freezing a bunch. A big thanks to the submitter...you're gran must have been one heck of a cook!

Barbeque Chicken

Meet our new favorite family meal! So simple and incredibly delicious and satisfying. My husband made this with garlic mashed potatoes...our picky teens gobbled it up! If you think you're not a fan of chicken thighs, think again...this recipe is FANTASTIC!!!

Tuscan Soup

Oh My Lord!!! This is one of the best soups I have EVER had! The flavor is tremendous and the recipe is so unbelievably simple! Foolproof as well. I didn't have any spinach, so I added a good healthy dose of parsley for greenery. I also used low sodium chicken stock, sweet italian sausage, instant dry milk. I topped my steaming bowl with shredded jack and colby. It is so hearty I didn't need a single cracker. I just know that spinach would make this dish even more amazing....I'll be sure to remember to get some! I think the suggestion for adding diced tomatoes sounds great, and I'm certainly going to give it a whirl. A truly scrumptious soup, this has been added to my fall/winter menu!!! MAKE IT!!! Update: I made a huge slow cooker full of this wonderful soup for our Halloween party. The pot was EMPTIED and got RAVE reviews. People could not get enough of this soup. My new fave for gatherings and parties!

Flourless Chocolate Cake I

This is hands down my absolute favorite chocolate cake...ever! IMHO, there is not a flour cake out there that can compare to this recipe. Incredibly rich and flavorful, very smooth. Lends itself to tweaking by adding different garnishes. Gauranteed to impress your dinner guests, it's a fabulous way to end a meal!

BLT Pasta Salad

Very simple, very nice!!! I'm teaching daughter to cook during summer break, so today we made this. We all loved it! 5 stars as written, but we both wanted to amp the flavor up a bit...we added a drizzle of lemon, red wine vinegar, a sprinkle of black pepper and red pepper flake. Next time we are going to add chopped red pepper and use a purple onion. Thanks for this...it will go into daughters recipe folder as a keeper!

Tomato Cakes

Holy cow...I simply cannot believe that so few ingredients can yield something so fabulous! I am teaching daughter to cook over summer break and this one was on her list. We were both so pleased with the results! We used italian flavored tinned tomatoes, adding extra oregano, basil, cilantro, paprika, garlic and onion. I think next time we may even add a touch of parmesan. Instead of forming into patties, we dropped them into oil by the spoonful, and pressed them flat with the back of a spoon...we also found that making the patties smaller made them easier to flip. We topped ours with a dollop of sour cream, but mayo, blue cheese or mozerella would be nice, too. I think perhaps these would even broil nicely in your oven. I like that I always have the ingredients for this recipe in my pantry, since I can see we will be eating this alot! THANKS!!!!

Best Lemonade Ever

I JUST made this, and it really IS the best lemonade ever! The perfect blend of sweet and tart. I microwaved my sugar & water mixture, to save time. I also pricked my lemons with a fork and gave them a minute in the micro as well, to release all the wonderful juices. I was short on lemons, so I used a few squirts of bottled juice. I went easy on the water, subbing in quite a bit of ice...it was ready to drink much quicker that way. This was a HUGE hit with my family. Forget the HFCS~filled stuff in the can...make your own, and be sure use this recipe!!! Top notch!!!

Garbanzo Bean Chocolate Cake (Gluten Free!)

Wow wow wow!!! This is so yummy and smooth! Waaaay better than any cake made with flour! I may tweak this a bit in the future, but it is wonderful as written! This is another go~to favorite for gatherings at work, as I have many gluten intolerant coworkers...they're gonna LOVE me!

The Best Lemon Bars

Hats off to the poster/creator of this recipe! It is an amazing balance of tart and sweet. The shortbread crust is a pefect accompaniament to the soft lemon filling. Like another reviewer, I'm not a huge fan of graham cracker crust...to me it is too sweet. I made this recipe to take to a cookout. I wanted something simple that I could throw together after working all night, and something that would go with any type of food. This fit the bill...it is so simple to make, and lemon goes with goes with everything! This has been added to my line up of favorites! I printed it and filed it in my allrecipes folder, which is filled with only the very best recipes. Thanks so much!

Brigadeiro

Other reviewers were extremely helpful and I was able to get the consistency just right. The brigadeiro set up just like they should, so if you do make them, follow the recommendations of others.... BUT, I did not care for the flavor at all. Even my children and husband didn't like them. I think you have to REALLY love the flavor of condensed milk to enjoy these.

Fish Tacos

Holy Gawd is this fabulous!!!!! I have made it several times now, and depending on what I have to hand, it comes out a little differently each time....and ALWAYS wonderful! The sauce is what makes this a 5 star recipe. I use a pre-shredded cole slaw mix, which saves time and adds even more flavor. I have added fresh corn kernels shaved from the cob in this and found it was soooo good! The last timeI made this recipe, I did not bread the fish, just fried it in a bit of coconut oil...husband and I both agreed that it was just as yummy...saves calories and carbs too! Also, I used flour tortillas, which we prefer with this recipe. The pico de gallo and limes are a great addition. I could eat this every day!

Potato Soup with Fish and Cheese

Wow, this soup is fantastic!!! I used sweet potatoes as it's what I had to hand. I also added red pepper flake, coriander, a tiny drizzle of honey, a dollop of organic broth paste, and a can of whole kernel corn. I was worried that the eggs might cook when I added them to the soup, but they were fine. I will make this alot, even in summer! Thanks for this wonderful recipe!

Angel Biscuit Rolls

These are AWESOME...simple, easy and delicious...perfect for busy families! Love the light texture without all the work of traditional yeast rolls. The flavor is improved with a touch more salt and subbing butter for half the shortening. I cut the butter/shortening mix into the dough with a pastry blender, then added the warmed buttermilk. The DOUGH IS VERY STICKY, but don't be put off by this...it's the stickiness that puts the "roll" in biscuit rolls. Seems chilling makes the dough a bit easier to work with. My family loves these biscuits...they go so nicely with just about anything you might serve and are a big hit at breakfast. Highly recommended!!!

Coconut Macaroons III

I can certainly see why these are prize winning cookies!!! So simple and absolutely scrumptious!!! I made a batch for a family member who has just returned from hospital, and brought some to work where they recived a huge thumbs up. I made these just as written and the flavor was great...I may try a dash of almond extract as suggested by other reviewers. I was tempted to add some chocolate to the tops, but they were oh so good as is, I decided against it. I cooked mine on parchment paper, for ease. I also sprayed my scooper with a touch of non-stick spray. I think these would ship well, if packed in a tin, and will be added to my list of treats for holiday gift giving. I am so glad I tried this recipe...it is a real keeper!
