Zucchini 'Noodles'

I bought a spiral cutter, and was going to make an alfredo sauce, but my daughter wanted something lighter and found this recipe. I'm glad she did! I didn't boil my noodles, just added them raw to the sautéed garlic and butter. When they were done, I drained off the excess liquid, added about 1 tsp. of herbs de Provence, a few tbsp of fat free half and half, and then the grated Parmesan. This was an amazingly good substitute for Fettucini alfredo and everyone loved it. Since the zucchini cooks down a lot (used 7 med ones for 4 adults with NO leftovers) this will be a great way to use up all the zucchini from the garden this summer. Thanks for the recipe!

Creamy Cucumber Dressing

I didn't like the texture of this. Yogurt is not the right consistency to get a truly "creamy" dressing. I liked the flavor but next time I make it I will try half yogurt and half mayo to get a creamier texture. Also, I would recommend straining the yogurt a little over cheesecloth so that the end result was not quite as "thin".

Fluffy Pancakes

I forgot the shortening and these were still the BEST pancakes EVER! Light, fluffy, each one was about 1/2" thick and tasted great. I didn't miss the shortening, so I'm not going to add it next time, either! Thank you so much for this recipe.

Tarragon Chicken Salad II

This is an EXCELLENT chicken salad. The tarragon gives it a sophisticated but subtle "something" that everyone seems to love. I made this for my daughter's baby shower, served on croissants. Everyone LOVED it! I'm thinking about growing tarragon in my garden just so I always have it on hand to make this. Thanks for the great recipe! =)

Strawberry Trifle

I made this exactly as written with one addition -- sprinkle some nutmeg over the pudding layers for a little added flavor. That was a subtle but great addition. It was wonderful, and a hit with the family. Super easy, and beautiful presentation. Make it lighter by using sugar free whipped cream and pudding. Will definitely make again.
