Manicotti Shells

Quick and easy. I did change a couple of things. I used seltzer instead of water. After everything was mixed, I then ran the mixture through a seive and refrigerated for an hour. I used vegetable spray instead of butter in the fry pan. A couple minutes on each side at low heat is all it takes.

Banana Sour Cream Bread

I halved the recipe and then made 1 loaf and 12 muffins. I put chocolate chunks on top of the muffins before baking. They came out great; very moist and flavorful.

Spinach Artichoke Feta Ball

Easy and festive. This is nice enough for company on a holiday. I made mine in the shape of a ball. I did not use the ranch dressing and rolled it in sliced almonds before I chilled it for a few hours. Great taste and texture. Next time however, I will take it out of the fridge for alittle before serving.

Roasted Rosemary Cauliflower

Very easy to make and was so good. After about 25 mins I topped with panko and then broiled. It gave it a nice crunch. Also added garlic powder after it came out of the oven.

Onions Baked with Rosemary and Cream

Elegant and easy to make. I covered it the first 30 minutes and also added a 1/4c of white wine. This makes a great side dish. Sure to impress and the aromas are to die for.

Sweet Vidalia Onion Pie

This was easy to assemble and quite good. I didn't mix the cheese in with the egg and cream mixture. I layed it on top after I spread the mixture onto the crust. My wife said it was gourmet! Garnished it with salsa and snipped chives. WOW.

Buttermilk Pancakes II

This recipe feeds alot of people. I made mine with a splash of vanilla extract and fresh blueberries. I was a little worried that the batter was too thick, but the pancakes turned out great. Remember, don't flip too soon, wait for those bubbles to burst.

Fantastic. However, I left out the spinach. Most of all, I served it with a white sauce instead of a red sauce. The white sauce tastes better with the meat filling and also it's more tradional. Don't forget the fresh nutmeg in the sauce, it makes all the difference.

Beaker's Vegetable Barley Soup

First off. I made vegetable stock from a recipe on this site. Then I made this soup. It had that richness usually only found with chicken as the base. I also cut the barley in half because I like my soup soupy and it was awesome! I will make this again very soon. We couldn't believe how good it really was.

Apple Walnut Salad with Cranberry Vinaigrette

I thought this salad was delicious. I read some reviews that said the dressing was too thick but I completely disagree; even using less oil than the recipe calls for. I did however, blend this with an imulsion blender instead of in the food processor. I have already made this salad again and prefer it with sliced pears instead of apples.

Blueberry Sauce

I love quick and easy recipes and this one is at the top of the list. It came together in 5 minutes as stated on the recipe. It was however, like other reviewers said, much better after it has cooled for about an hour. I used frozen blueberries and the sauce came out great.

German Potato Pancakes

Fantastic. First time for me and it was a breeze. Next time I will make them thinner so they crisp up more and faster than they did. I made them for breakfast with poached eggs and hollandaise. This is a keeper for me.

Great taste and easy to prepare. Don't over mix your batter to insure light and fluffy waffles. They went great with the homemade blueberry sauce I also made from this website.
