Lower Fat Banana Bread I

A very good dense bread. I added walnuts, 4 bananas and chocolate chunk chips. It was really good. Even better the longer is sets.

Beaker's Vegetable Barley Soup

First off. I made vegetable stock from a recipe on this site. Then I made this soup. It had that richness usually only found with chicken as the base. I also cut the barley in half because I like my soup soupy and it was awesome! I will make this again very soon. We couldn't believe how good it really was.

Black Bean Hummus

Fantastic recipe. It is fast and easy. It tastes better than it looks! I took the advice of a Arab friend's mother and warmed the beans in its own liquid before I started. The fresh garlic and the tahini are the keys to the recipe; however, I used 3 cloves of garlic instead of 1. I also topped it with extra virgin olive oil. I will make this again.

Janet's Rich Banana Bread

Awesome. The bread was very moist and flavorful. I added a dash of cinnamon and nutmeg to the dry ingredients before mixing into the wet. The smell was so good, I couldn't wait to let it cool down, I ate it when it came out of the oven. I will make this again. Thanks.

Quinoa Tabbouleh

Excellent recipe. It was very flavorful and is easy to put together. Great salad/ side dish. Extra virgin olive oil and fresh lemon juice are the keys to the recipe. I also added some fresh garlic for some punch. It will be a part of my rotation.

Cheddar Buttermilk Biscuits

Awesome and cheesey. I added scallions to mine and they came out great. The biscuits rose so high, it was a good thing I had them in the middle of the oven. Definately, I will make these again.

Black Bean and Corn Quesadillas

I thought this was just okay. We felt it had too much corn. The flavor was good and it was easier to handle after it cooled a bit. Next time I will use pepper jack cheese instead.

Banana Crumb Muffins

Good recipe. I cut the sugar to 1/2c as others suggested. The next time I make these muffins, I will not. I added walnuts for crunch. They were moist but again, don't cut the sugar.

Spinach and Leek White Bean Soup

Absolutely much better than expected. However, I made several changes to suit our tastes. I doubled the cumin, added 8 cloves of garlic, used no-chicken stock(vegetarian), added 1c more stock and lastly didn't add the couscous. With these changes, a great soup was the outcome. I will make this over and over again.

Grandmother's Buttermilk Cornbread

Great recipe. Used a 8X8 baking pan for 35 minutes and it was awesome. I didn't have buttermilk so I mixed 1T apple cider vinegar with 1c milk. Other than that, I followed the recipe to a tee and it was great. Not too sweet at all.

Lentil Soup

Very good recipe. It was however, much better the next day. I used no-chicken stock (vegetarian) instead of chicken stock or water. The vinegar is very important in this recipe. Be sure to add a little extra as well as some extra salt and garlic, to make up for the lack of chicken stock. This recipe with some tweaking, will be a staple for me.

Simple Scones

Good recipe. I made mine wih blueberries and lemon zest. They came out great. They baked for about 17 minutes. I will make these again. However, I felt the dough was a little too sticky. Also, the amount of utensils needed was daunting.

Quinoa Side Dish

This is a great recipe. The flavors meld very well together. I didn't saute my garlic and onion first and glad I didn't. The onion gave the dish a mild crunch. The heat from the hot quinoa cooks the garlic and onion anyway. The combination of textures is what makes this recipe great. I did however make this with no-chik stock (vegetarian) and also put lemon zest instead of lemon juice. The zest gave it a nice look and also the freshness that lemon is used for. I will make this over and over again.

Onion Barley Casserole

All I can say is awesome. This recipe is quick to prepare, hearty and most of all, tastes great! I used shitake mushrooms and added 2 cloves of garlic and WOW, I should have made double the recipe. Tip, watch and stir mixture occasionaaly, mine took about 35-40 minutes, not 50. I will continue to make this. Thanks so much for the recipe.

Grilled Marinated Shrimp

This recipe was very easy to put together. I prepared this exactly as written. It was good but not great. I felt there was something missing. It was a little oily. Next time I will use less oil and more lemon juice and some lemon zest.

Roasted Brussels Sprouts

Excellent recipe. Coming from someone who didn't like brussel sprouts, if they only tasted like this, I would have been a fan sooner! They were not bitter at all. The roasting really brings out the sweetness in them. I did put minced garlic on, but it really got charred from the roasting. Next time I will use garlic powder on them after they come out from the oven. Other than that, I wish I had made more.

great recipe. i used shitake as well as portabello. i added some italian seasoning for flavor. most of all i sauted fresh leaf spinach(not baby) which gave it a more hearty feel. one tip, make sure the spinach is as dry as possible.

Guacamole

Excellent recipe. This is the first time I've ever made guacamole and this recipe was easy and delicious. I omitted the tomato since I'm not a fan of tomatoes. I made the guacamole chunky, which I think gives more avacado flavor. One tip - make sure the avocados are soft and not firm.
