Grandma Johnson's Scones

Reviewed: Jan. 9, 2008
I made half the recipe blueberry and lemon. The other half was dried cranberry and slivered almonds. The were good but I felt they were alittle too fluffy/cakelike. Good recipe but there are better ones.

Corrigan's Minestrone

Reviewed: Jan. 9, 2008
I used homemade vegetable stock that I made first. This soup is very healthy and satisfying. I used almost double the stock as written and only half the pasta. It came out great. I added zucchini; any vegetable you like will work fine. Cannot wait to make this again.

Roasted Rosemary Cauliflower

Reviewed: Jan. 8, 2008
Very easy to make and was so good. After about 25 mins I topped with panko and then broiled. It gave it a nice crunch. Also added garlic powder after it came out of the oven.

To Die For Blueberry Muffins

Reviewed: Jan. 2, 2008
I followed the recipe exactly, except I halved the topping as others have suggested. We both felt that these were not sweet enough. If there is a next time, I will not half the topping. Maybe that was the reason why the were just okay.

Great treat. Made fresh crepe shells, tomato sauce, and spinach filling. This really was special.

Manicotti Shells

Reviewed: Dec. 16, 2007
Quick and easy. I did change a couple of things. I used seltzer instead of water. After everything was mixed, I then ran the mixture through a seive and refrigerated for an hour. I used vegetable spray instead of butter in the fry pan. A couple minutes on each side at low heat is all it takes.

First time with baked french toast. This was a little dry. Nice change though.

Banana Sour Cream Bread

Reviewed: Dec. 16, 2007
I halved the recipe and then made 1 loaf and 12 muffins. I put chocolate chunks on top of the muffins before baking. They came out great; very moist and flavorful.

Best Ever Blueberry Cobbler

Reviewed: Dec. 10, 2007
Took the suggestions of others and added more sugar and corn starch. To be honest, I think it could use even more. That said, this was good, especially warm with vanilla ice cream.

Barley Casserole

Reviewed: Dec. 10, 2007
Hearty and satisfying. It needs more salt and garlic, however. A great side dish.

Apple Walnut Salad with Cranberry Vinaigrette

Reviewed: Dec. 4, 2007
I thought this salad was delicious. I read some reviews that said the dressing was too thick but I completely disagree; even using less oil than the recipe calls for. I did however, blend this with an imulsion blender instead of in the food processor. I have already made this salad again and prefer it with sliced pears instead of apples.

Lower Fat Banana Bread II

Reviewed: Dec. 4, 2007
Truely awesome. I've tried several banana bread recipes here, this is my favorite. The fact that it's lower fat, makes it even more appealing.

Blueberry Sauce

Reviewed: Nov. 25, 2007
I love quick and easy recipes and this one is at the top of the list. It came together in 5 minutes as stated on the recipe. It was however, like other reviewers said, much better after it has cooled for about an hour. I used frozen blueberries and the sauce came out great.

Classic Waffles

Great taste and easy to prepare. Don't over mix your batter to insure light and fluffy waffles. They went great with the homemade blueberry sauce I also made from this website.

German Potato Pancakes

Reviewed: Nov. 22, 2007
Fantastic. First time for me and it was a breeze. Next time I will make them thinner so they crisp up more and faster than they did. I made them for breakfast with poached eggs and hollandaise. This is a keeper for me.

Blender Hollandaise Sauce

Quick and easy. If you can seperate eggs and run a blender, you can make this. A little too lemony, but still good.

Buttermilk Pancakes II

Reviewed: Nov. 18, 2007
This recipe feeds alot of people. I made mine with a splash of vanilla extract and fresh blueberries. I was a little worried that the batter was too thick, but the pancakes turned out great. Remember, don't flip too soon, wait for those bubbles to burst.

Sweet Vidalia Onion Pie

Reviewed: Nov. 11, 2007
This was easy to assemble and quite good. I didn't mix the cheese in with the egg and cream mixture. I layed it on top after I spread the mixture onto the crust. My wife said it was gourmet! Garnished it with salsa and snipped chives. WOW.
