Tasty Lentil Tacos

Very tasty. I made these as burritos. I mashed them with the back of a fork. However, I didn't make them mush so they still had some texture. Homemade spanish rice and guacamole rounded out this feast. Lentils are a super-food and a great alternative to meat.

Creamy Blueberry Pie

This has a nice texture to it and great blueberry flavor. I thought it was more of a cake than a pie however. I used frozen blueberries and because of that, it took about an hour longer to bake. Next time, I will either defrost first or use fresh berries. All in all, a nice dessert.

Sicilian Ricotta Cheesecake

Awesome. Much lighter than the cream cheese version. I made mine lemon instead of orange. Other than that, I followed the recipe. This is refreshing after a full meal. But then again, anything ricotta is fine by me!

Grammy's Calamari Salad

Nice recipe and great as an appetizer. I added cut up shrimp to mine. I steamed the calamari about 7-9 mins. Steaming is a gentler way of cooking and it makes it harder to overcook, which you don't want to do. Put some fresh bay leaves and the peel of 2 lemons in the water your steaming over. Cover and cook for several minutes, stirring often. Dress the calamari when it's still hot then chill so flavors meld. Remove from fridge alittle before you eat it and re-toss in dressing.

Fig and Ricotta Crostini

Elegant and impressive. I made these for a family dinner and there were none leftover. I followed the recipe exactly except I put the figs into a processer and pulsed until chopped fine. It made this so much easier to eat these two bite crostinis. Use good balsamic vinegar, it makes all the difference. LOVED this recipe.

Lemon Herbed Salmon

I would give this 6 stars if I could. I enjoy eating salmon at least once a week. This is a great way to make it. Very tasty and oh so easy. I used Panko for the bread crumbs, extra virgin olive oil instead of butter and broiled for a few minutes after baking for some crunch. This is some recipe. Thank you so much. I don't think I will make salmon any other way now!

This was easy to assemble. But I felt it lacking something. I added some shredded lettuce for a crunch. Solid though and a nice change.

Hungarian Flourless Hazelnut Cake

This recipe is very good but the trick is to make sure the hazelnuts are ground very fine. I put them in the food processor and then put them through a sieve to make sure they were ground fine enough.

Delicious Raspberry Oatmeal Cookie Bars

I thought these were a little too dry. Easy to put together. I heated the preserves in the microwave for a few seconds which made it easier to spread. Any kind of filling can be used in this recipe.

Low Carb Cauliflower Leek Soup

It came together very easily. But, it was a big disappointment for me. I took the advise from others and used 6 cups of vegetable stock I had made. It was still way too thin. Maybe I did something wrong, I don't know.

Bulgur Wheat with Dried Cranberries

Very good recipe. This can be one of those dishes that is different everytime you make it, depending on what's in the fridge. Next time I'll try pine nuts and basil. It seemed alot like a short grain rice or a couscous. Very versatile.

Zucchini Herb Casserole

Excellent. I used brown rice, canned stewed diced tomatoes, halved the cheese and topped it with panko bread crumbs. I broiled it for 5 minutes after baking. Awesome recipe. This is now a staple for me.

Spinach Artichoke Feta Ball

Easy and festive. This is nice enough for company on a holiday. I made mine in the shape of a ball. I did not use the ranch dressing and rolled it in sliced almonds before I chilled it for a few hours. Great taste and texture. Next time however, I will take it out of the fridge for alittle before serving.
