Chickpea Curry

Fantastic! I followed the recipe as written, but rinsed the chick peas first and added a 1/2c of stock to simmer and thicken. I served it over brown rice. The next time, I'll make a double recipe it was that good.

Awesome and Easy Creamy Corn Casserole

This casserole was very moist and tasted like corn bread. I do think it was a little bland however, and needs some more spice. I added chopped scallions which helped, but it still needed more.

Brooke's Best Bombshell Brownies

Simply put, these brownies are da bomb! They are extremely moist and very chocolatey. My only comment is to make sure you do not overcook them even a little because the ends turn very hard.

Italian Peas

I used red onion in place of white. It was super easy and very flavorful. You will be fine using frozen peas, which also makes it low cost. This takes less time than stated, maybe 10-15 minutes. Now a part of my rotation.

Homemade Black Bean Veggie Burgers

Great tasting but they need as least double the bread crumbs or maybe even more than that. next time I will chill the the mixture before I make the patties. I also cut back on the cumin a bit. 1T would have been too much.

Chocolate Chip Banana Muffins

What a treat! I added some white, milk and dark chocolate chips. Along with some chopped walnuts went 3 overly ripened bananas, which were left chunky. These were super moist and even more flavorful. We loved these muffins.

Elegant Orzo with Wilted Spinach and Pine Nuts

A solid recipe. It was very colorful and the balsamic vinegar and feta cheese are a very nice combination. I used a 12 oz. bag of baby spinach as others have suggested. Fresh basil along with the pine nuts which I browned pretty well, gave it great flavor.

Lentils and Rice with Fried Onions (Mujadarrah)

This recipe as written doesn't make sense to me. Admittedly, this is a Middle Eastern dish, yet the only spices are salt and pepper. When I hear Middle Eastern, I think corriander and cumin and garlic. So I added 1/2t. of each and it really made such a difference. Also, really get those onions carmelized. The onions give the dish great depth of flavor. This recipe also makes alot.

Strawnana Bread

Good recipe and a nice change from plain banana bread. With that said, I prefer a plain banana bread to this. I didn't mash the berries to mush, I left some texture to them by not using a mixer but mixing it by hand.

Chocolate Banana Bread Pudding

Awesome. What a way to use old bread and bananas. I added too much extra chocolate chips (my fault) to my pudding. This recipe doesn't need any altering, it is that good. Homemede vanilla sauce finished this treat. Nice enough dessert for guests.
