Stuffed Cabbage Rolls

I really enjoyed this. My boyfriend was so happy when he got home and saw what I was making. They turned out even better than the fancy ones at the local speciality shop's deli. I cut the recipe in half and added some minced garlic, which I sauted with the onion prior to mixing with the meat. I used the entire can of soup though. I will definitely be making this again.

Szechwan Shrimp

My boyfriend was excited I was preparing shrimp, but when he saw me break out the ketchup bottle he got a bit scared. It only took one bite to get rid of his skeptisim though. He loved it and wouldn't stop talking about it. I might have to start making this once a week just to get him to shut up.

Tzatziki Sauce I

Yum. I used greek yogurt and added a cucumber to the mix also. I served this as a dip with veggies and pita chips and then used it as a sauce for Greecian Pork. Outstanding.

Terrific Turkey Meat Loaf

I was really impressed with this, so was my boyfriend. We used the leftovers to make sandwiches the next day. Sourdough bread with mozzarella cheese heated in the oven until bubblely...then a big hunk of warmed meatloaf on top...yum.

Balsamic-Glazed Salmon Fillets

ABSOLUTELY WONDERFUL! This was my first attempt at fish and I was so impressed with myself. It was so easy to prepare. I follow the directions as written and I just loved it. It made for a really nice dinner for my boyfriend and I. We paired it with the honey glazed carrots and peas from this site, some fresh bread, and wine.

Crackle Top Molasses Cookies

I am NOT a baker. I love baked goods, but I can't make them. They always taste good, but look horrible. I was so happy last night when these came out of the oven and looked like I had purchased them at a high end bakery. I took some to work and they got rave reviews by everyone. Someone even asked for the recipe...I was so proud of myself. I think I'm going to have to make another batch today!

Sangria! Sangria!

AMAZING! I love sangria, so there was no doubt I would enjoy this. I was so excited when my guests adored it too. The men were too "manly" to try it, but 3 girls (including myself) downed 2 batches. I will definitely be making this again.

Grecian Pork Tenderloin

This turned out really well. Even the "picky" eaters of the group devoured it. I prepped the meat the night before and let it marinate for about 24 hours. It was so moist. I tossed it in a roasting pan (along with all the marinade) and baked it at 450 for about 20 minutes. I served it with Tzatziki I (recipe from this site) and it was a huge hit.

Burgundy Pork Tenderloin

AMAZING! Everyone raved about this dish. It turned out so well and it was beyond simple to put together. I left out the onion and celery and ended up using two gravy packages. Definitely a keeper.

Beer and Brown Sugar Steak Marinade

My boyfriend and I made this randomly one day when we were in need of a marinade. The word "beer" in the title is what caught his eye. We substituted worcestershire sauce for teriyaki and added a little extra beer for good measure. We prepped it around noon and let it sit in the fridge for about 6 hours. It turned out absolutely amazing. He used the little bit of leftover steak to make what he called "the best sandwich ever" the next day. All in all, it was good stuff.

Just great. These came out super moist and the smell alone was mouth watering. I used egg whites and splenda sugar blend because that's what I had on hand. This is definitely my new favorite muffin.

Maple-Garlic Marinated Pork Tenderloin

I halved the recipe and then didn't have quite enough maple syurp. This was the first time we've attempted pork tenderloin on the grill and it came out so wonderful. I took a risk and served this for company - not knowing if the maple/garlic combo would work. It totally did. This was great!
