Terrific Turkey Meat Loaf

I was really impressed with this, so was my boyfriend. We used the leftovers to make sandwiches the next day. Sourdough bread with mozzarella cheese heated in the oven until bubblely...then a big hunk of warmed meatloaf on top...yum.

Easy Marinated Vegetables

This was just great. I mixed in some crumbled reduced fat feta and used Ken's Greek Dressing. I served it as salad for a meal. It made a lovely little snack the following day too. I prepped the whole thing the night before so it had plenty of time to marinate and soak up the dressing.

Grilled Asparagus

I love asparagus, but it's 10 times better on the grill. While I'm sure it's great as written. I took the advice of another reviewer and used lemon pepper instead of just pepper...wow. It was amazing.

Braised Balsamic Chicken

I scaled the recipe down to 2 servings and then followed everything as written last night. The dinner turned out absolutely wonderful. There wasn't an overpowering balsamic taste like other reviewers mentioned. It was perfect. I served each chicken breast over brown rice and then sprinkled just a bit of mozzarella cheese on top. I served it along side fresh broccoli that I prepared like "Pan-fried Asparagus" also. It was a really great meal. I wish I would have held off on making it until today. We're having company over and it would have been great to serve. Maybe the DBF will eat it 2 nights in a row...heck, I wouldn't mind.

Tzatziki Sauce I

Yum. I used greek yogurt and added a cucumber to the mix also. I served this as a dip with veggies and pita chips and then used it as a sauce for Greecian Pork. Outstanding.

Sangria! Sangria!

AMAZING! I love sangria, so there was no doubt I would enjoy this. I was so excited when my guests adored it too. The men were too "manly" to try it, but 3 girls (including myself) downed 2 batches. I will definitely be making this again.

Veggie-Bean Brunch Casserole

I thought this was pretty good. My boyfriend thought it was just okay. I attempted to give some leftovers to a family member and they wouldn't touch it. I'd make it again, but maybe just for myself.

Beer and Brown Sugar Steak Marinade

My boyfriend and I made this randomly one day when we were in need of a marinade. The word "beer" in the title is what caught his eye. We substituted worcestershire sauce for teriyaki and added a little extra beer for good measure. We prepped it around noon and let it sit in the fridge for about 6 hours. It turned out absolutely amazing. He used the little bit of leftover steak to make what he called "the best sandwich ever" the next day. All in all, it was good stuff.

Applesauce Muffin Mix

Just great. These came out super moist and the smell alone was mouth watering. I used egg whites and splenda sugar blend because that's what I had on hand. This is definitely my new favorite muffin.

Asian Pork Tenderloin

We let the tenderloin sit overnight and cooked it on the grill instead. I grilled up some broccoli to serve along side it and turned the extra marinade into a sauce that we drizzled over the pork and veggies. We added a few cashews on top to finish it off. Great taste and presentation. Wish I had taken a picture :)

Honey Glazed Pea Pods and Carrots

I really enjoyed this. I had to use frozen carrots and pea pods but it still came out great. I made it as a side dish for Balsamic-glazed Salmon Fillets from this site.

Szechwan Shrimp

My boyfriend was excited I was preparing shrimp, but when he saw me break out the ketchup bottle he got a bit scared. It only took one bite to get rid of his skeptisim though. He loved it and wouldn't stop talking about it. I might have to start making this once a week just to get him to shut up.

Tomato Chicken Parmesan

I didn't have all the correct ingredients, but I decided to give it a try with the types of cheese I had on hand. I used shredded mozzarella and slices of havarti. I didn't like the idea of frying, so I baked them on a cookie sheet at 350*. After 20 minutes, I took the chicken out and assembled them in a lasagna pan over the sauce. I continued baking for another 15 minutes, adding the cheese slices during the last 5. My cheese wasn't melted quite the way I wanted, so I flipped the oven to broil and waited until the cheese got slightly brown and bubblely. It came out great! I served it with a mixed greens salad and corn bread with garlic butter.

Stuffed Cabbage Rolls

I really enjoyed this. My boyfriend was so happy when he got home and saw what I was making. They turned out even better than the fancy ones at the local speciality shop's deli. I cut the recipe in half and added some minced garlic, which I sauted with the onion prior to mixing with the meat. I used the entire can of soup though. I will definitely be making this again.

White Chili with Ground Turkey

The recipes was too soup like, so I had to add less chicken broth. I threw in a small can of corn on my own too -- otherwise it would have been a 5. It was different, but a really nice change from the traditional chili I always have.
