I didn't have all the correct ingredients, but I decided to give it a try with the types of cheese I had on hand. I used shredded mozzarella and slices of havarti. I didn't like the idea of frying, so I baked them on a cookie sheet at 350*. After 20 minutes, I took the chicken out and assembled them in a lasagna pan over the sauce. I continued baking for another 15 minutes, adding the cheese slices during the last 5. My cheese wasn't melted quite the way I wanted, so I flipped the oven to broil and waited until the cheese got slightly brown and bubblely. It came out great! I served it with a mixed greens salad and corn bread with garlic butter.
