Lemon Garlic Tilapia

I made this as a special dinner for my boyfriend prior to him going out of state for a few days. It was so easy to put together but came out really impressive. Definitely a good company or special occasion dish. I served it along with "pan-fried asparagus" from this site (the best side ever) that I added some mushrooms to towards the end of cooking. A really healthy and satisfying meal. The only thing I would change is maybe adding some crushed red pepper flakes to the fish while cooking. That would have made it a 5*. Yum.

Asian Pork Tenderloin

We let the tenderloin sit overnight and cooked it on the grill instead. I grilled up some broccoli to serve along side it and turned the extra marinade into a sauce that we drizzled over the pork and veggies. We added a few cashews on top to finish it off. Great taste and presentation. Wish I had taken a picture :)

Maple-Garlic Marinated Pork Tenderloin

I halved the recipe and then didn't have quite enough maple syurp. This was the first time we've attempted pork tenderloin on the grill and it came out so wonderful. I took a risk and served this for company - not knowing if the maple/garlic combo would work. It totally did. This was great!

Grilled Asparagus

I love asparagus, but it's 10 times better on the grill. While I'm sure it's great as written. I took the advice of another reviewer and used lemon pepper instead of just pepper...wow. It was amazing.

Eggplant Mixed Grill

This was good. I ended up having to chop things up and turn all the veggies into kabobs...but I really liked the flavor from both the balsamic and the grill itself.

I thought this was great. I think I over stuffed the mushrooms though. I had someone complain about the overly cream cheese taste. Other than that...yum!

Honey Glazed Pea Pods and Carrots

I really enjoyed this. I had to use frozen carrots and pea pods but it still came out great. I made it as a side dish for Balsamic-glazed Salmon Fillets from this site.

Balsamic-Glazed Salmon Fillets

ABSOLUTELY WONDERFUL! This was my first attempt at fish and I was so impressed with myself. It was so easy to prepare. I follow the directions as written and I just loved it. It made for a really nice dinner for my boyfriend and I. We paired it with the honey glazed carrots and peas from this site, some fresh bread, and wine.

Curried Honey Mustard Chicken

This was really just okay. It tasted like any other curry chicken dish to me. It was a nice meal. I paired it with brown basmati rice and peas. It just wasn't anything real special. I doubt I'll be making this again.

Szechwan Shrimp

My boyfriend was excited I was preparing shrimp, but when he saw me break out the ketchup bottle he got a bit scared. It only took one bite to get rid of his skeptisim though. He loved it and wouldn't stop talking about it. I might have to start making this once a week just to get him to shut up.

Tomato Chicken Parmesan

I didn't have all the correct ingredients, but I decided to give it a try with the types of cheese I had on hand. I used shredded mozzarella and slices of havarti. I didn't like the idea of frying, so I baked them on a cookie sheet at 350*. After 20 minutes, I took the chicken out and assembled them in a lasagna pan over the sauce. I continued baking for another 15 minutes, adding the cheese slices during the last 5. My cheese wasn't melted quite the way I wanted, so I flipped the oven to broil and waited until the cheese got slightly brown and bubblely. It came out great! I served it with a mixed greens salad and corn bread with garlic butter.

Braised Balsamic Chicken

I scaled the recipe down to 2 servings and then followed everything as written last night. The dinner turned out absolutely wonderful. There wasn't an overpowering balsamic taste like other reviewers mentioned. It was perfect. I served each chicken breast over brown rice and then sprinkled just a bit of mozzarella cheese on top. I served it along side fresh broccoli that I prepared like "Pan-fried Asparagus" also. It was a really great meal. I wish I would have held off on making it until today. We're having company over and it would have been great to serve. Maybe the DBF will eat it 2 nights in a row...heck, I wouldn't mind.

Ratatouille

Well I messed up and didn't do this in the oven. I thought I'd cheat and throw it in the slow cooker on low for 8 hours like another reviewer suggested. It tasted just fine. I had two bowls full actually. It sure didn't look appealing though. It looked like a big container of brown mush. I'll definitely make it again, just as written this time.
