Black Bean and Corn Quesadillas
OK I did the lazy mans version of this and used cheddar cheese soup for cheese and a can of Costco chicken because my roommate wants meat in his meals but this was still very good. I always read reviews to get a feel or what can be done with the recipe. I added Costco chopped jalepeno and cumin. I fried up the tortillas before hand and put it in the oven for 6 minutes at 450 folded over with the filling inside.Next time I will take the time to chop the cheese. Recipe really divides nicely for 8 people. I made 4 and have enough filling in the fridge for 4 more Quesadillas for lunch tomorrow :)

Pecan Tarts
This was unbelievably simple to make. I used real maple syrup and subbed brown sugar for white. I think my only fault was in adding too many pecans. I missed the holiness of a butter tart. Will use less next time. This was my first try at butter tarts. It only takes a few minutes to throw to getter and if you are using ready made shells its pretty hard to screw up. Will never buy butter tarts again. So easy to it make these. Thanks for the great reiepe.

Coconut-Avocado Ice Cream
Good lord! This was amazing. My favorite new ice cream I will make again and again. I will try withe the cookies. Yesterday was the first time I ever even tried Avocados. I made a salsa which kinda flopped, but this was heavenly. I even used splenda in place of sugar and it came out fine. I used coconut milk and half and half. so fresh. Due to the fat content I didn't even have to pull out my Cusinart ice cream maker. It was practically ready fresh out of my Ninja blender. I will try the coconut or nuts with this next time. This would be great for Atkins diet. Not sure about the coconut milk for that one but you could sub with whipped cream. Dr Atkins would approve.
