Sweet Chipotle Grilling Sauce

I used this sauce to top country style that I cooked in the oven at 275 degrees for 2 hours. I basted with the sauce, and stuck under the broiler. Due to the high sugar content, it caramelized in about 8 minutes. Just spicy enough. I only give it 4 stars b/c it was really too sweet for me. Next time, I might try adding a little more soy.

Slow Cooker Carnitas

So amazingly delicious! Didn't have ground coriander so I used fresh cilantro, and accidentally forgot the cinnamon. Added about 3 tbsp adobo sauce from a can of chipotles. So tender, it shredded the meat just by lifting little pieces with tongs right in the slow cooker! Served it to my husband in a bowl over rice (flavored with butter, lime, salt, and cilantro), black beans, sour cream, cheese, and avocado - just like his favorite restaurant!

Strawberry Dream Cake I

I've made this several times for parties and work events. Very moist! So much better than typical strawberry cake mixes due to the real frozen strawberries. One recommendation: don't overblend the strawberries, be sure to leave it just a bit chunky!

OREO Mini PHILLY Cheesecakes

These were pretty good: 3.5 stars if possible. The cheesecake portion came out a little dry, not really creamy at all, so next time will reduce the baking time by about 25%.

Chunky Cheesecake Brownies

Gave 4 stars so I wouldn't mess up the ratings. However: Accidentally used "chocolate-flavored" chips. Not sure if this is the reason, but these were a disaster. Really oily, undercooked, and way too sweet. Even my husband, who never turns away from sweets, didn't like them.

Quick Yeast Rolls

Having never cooked with yeast, and then having read some of the reviews about shaping into balls and greasing the outsides, I wonder if the recipe instructions were incomplete. Is it a given that one should do these things? Also, mine came out actually tasting like yeast. It was a bit unpleasant, and not at all like yeast rolls I'm used to at restaurants. My husband liked them okay, and ate two at dinner, but I couldn't even finish one. I will try these again some other time to see if they turn out better.

Sour Cream Chicken Enchiladas

The tortillas got very soggy and gummy. I thing these would likely be better with corn tortillas. Also, I couldn't find "jalapeno salsa" and I live in Texas. I may try these again w/ corn torts, and come back to change the number of stars. Also, I think Jack cheese would be far better.

Caramelized Baked Chicken

Very tasty sauce. Used chicken breast and baked in the oven, then thickened the sauce afterwards with cornstarch. I seasoned the chicken first with adobo sauce, and I think that made it a tad bit too salty, so I won't do that that again. It was really tasty as leftovers the next day served over white rice with asparagus, it almost had an asian vibe.

Chicken Spinach Quiche

I've made this with different cheeses, including gruyere, mozzarella, and jack; and I've also used low-fat sour cream in place of mayo and fresh spinach instead of frozen (since its difficult to use a whole bag from costco before it goes bad!). Canned chicken works, or leftover rotisserie chicken. Usually takes an hour to bake in my oven, and wrap the edges in foil so they don't burn.

Slow Cooker Chicken Stroganoff

I'm learning that everything tastes better with cream cheese, and this recipe is no exception! The only mistake I made was using a whole chicken. Apparently I'm the only one who didn't know that bones don't do so well in a slow cooker....Still delicious enough to deserve 5 stars! ***Update*** Made this again with boneless skinless breasts and omitted. Also, both times I've made this I add all ingredients at the very beginning rather than cooking several hours and adding cream cheese at the end. Once it was completely cooked it seemed a bit runny, so I shredded the breasts and put the meat back in. This made the sauce seem a little thicker, and more flavorful. Served over rice. Only complaint - needs more salt.

Jalapeno Pie Mini Tarts

Wow, I must have done something wrong since so many other reviewers loved it so much. One mistake was using the mini cupcake liners - the paper was stuck to the food and impossible to separate. But aside from that, the flavor was really just not very good. Not sure if I will try this one again.
