Garlic and Parmesan Chicken Wings

These were a huge hit at my party! I made them exactly according the recipe, and they were delicious. Served them with ranch dip. Next time, I might add a little more red pepper flakes and maybe even a little more garlic.

Pumpkin Turkey Chili

This recipe as written is really bland and thick as concrete. I doubled the chili powder, added a bay leaf, 1 tbsp cumin, 1 tbsp tandoori seasoning, 2 cups garlic chicken broth, & 1 can black beans. That made it taste pretty good. Oh, I didn't garnish with cheese or sour cream.

Rosemary and Brown Sugar Mixed Nuts

Flavor was delicious but: 1. way too SALTY!, 2. sugar/seasonings didn't stick to nuts due to butter. Made according to recipe except used fresh rosemary as I didn't have dried (weird, I know). I personally loved the rosemary flavor. Will definitely make again; however, next time I will use only 1/2 tbsp salt at most, and no butter. The sugar would stick to the nuts if it weren't for the butter.

MySweetCreations Peanut Butter Cookie Pie

This is another recipe that the husband and father-in-law absolutely loved, but I thought it was just okay. Made exactly according to recipe. Here are my thoughts: 1. The little bit of cinnamon in the crust was delicious, but a bit strong maybe for some tastes, and I actually didn't think it was a good flavor combination with PB. Next time I would omit the cinnamon. 2. The crust was delicious, but should have been thicker. Next time I will increase by 1.5-2x. 3. It is definitely best served DIRECTLY FROM THE FREEZER. Even sitting in the fridge it softened a bit too much and the texture was too loose. In the freezer it becomes more firm, but not hard. 4. Because it should be served right out of the freezer, it's probably not good for potlucks or buffet style meals.

Kiki's Borracho (Drunken) Beans

Followed the recipe exactly and the flavor is pretty good. I don't think they are too spicy as some other reviewers have suggested. I do however find the garlic flavor a bit too biting and the beer flavor too strong. (As in, the beans taste like beer). I would recommend sweating the onions & garlic in a little oil before adding to the beans to get rid of bitterness, possibly cutting back to maybe 4 cloves. Also recommend using about 8 oz of beer instead of 12.

Baked Potato Soup I

Made this tonight for my inlaws. It was delicious! However, I thought it required considerably more salt (about 3 tsps). Also recommend cooking 3-4 extra slices of bacon to garnish.

White Chili I

Five delicious stars that sent the husband back for seconds! The minor adjustments I made to accommodate cooking for two using what I had on hand stayed pretty true to the original recipe: 1. Used one large precooked breast, shredded; 2. 1 cup broth; 3. 1/2 can chiles; 4. fresh cilantro; 5. 1 can navy beans but not rinsed; 6. no green onions. It made approximately 3.5 perfect and delicious servings. I didn't have problems with it being too soupy, but had higher bean to chicken ratio. I using more than one chicken breast, I recommend using more than one can of beans. (but please stick to white beans. It's WHITE chili!) Topped with jack cheese, sour cream, and jalapeno slices.

Toffee Chunk Cheesecake

4 stars instead of 5 for two reasons: 1. There was way too much cream cheese mixture to fill the pan. I ended up having up about 1.5 cups extra. Maybe because the chocolate/caramel layer was so thick. 2. The cooking time is really off, and the majority of other reviewers are saying the same. I didn't trust the other reviews and followed the recipe as written. The cake was beautiful with no cracks. However, on cutting, the inside was more the texture of pudding. I believe the cake required at least another 30 minutes of cooking time, if not a full hour as others have suggested. Fortunately, the flavor is so amazing that the entire cake was eaten by family at Thanksgiving even though it was undercooked. Fix the time and it'll get 5 stars!

Zucchini Egg Bake

Delicious and healthful! Can also be made with broccoli or fresh mushrooms. If you don't have all the fresh herbs on hand or no parmesan, it's still really good without them. You can also separate into 4 ramekins and cook in a toaster oven for about 20 minutes on 350.

Bubble 'n' Squeak

This is delicious as is! However, it can be made a little healthier and still as delicious: To preserve nutrients otherwise lost to the cooking water, microwave the cabbage for 2 minutes to soften. To cut back a little on fat and calories, use a small amount of olive oil to cook the onion and microwaved cabbage, and bacon that has been pre-cooked and drained of grease (but don't eliminate the bacon pieces! It really makes the dish!). I also use a higher cabbage:potato ratio. Sometimes sweet potato, sometimes no potato. Another delicious variation is to use smoked turkey or duck instead of ham.

Excellent, flavorful, and juicy. Also try using a whole chicken cut-up, and bake on 300 for 2 hours. Make a gravy from the yummy drippings!

Thirty Minute Meal

This is really good and simple comfort food. The recipe is delicious as written, but I have a few variations as well: Season meet with a packet of taco seasoning and omit the tomato soup, or replace tomato soup with Rotelle, or use purple cabbage, or use ground turkey or turkey sausage.

Asparagus with Sliced Almonds and Parmesan Cheese

Aside from waiting to add the parmesan once the asparagus is plated, this recipe is the best way to serve asparagus! Why oh WHY do people insist on making casseroles and covering their delicious asparagus with needless toppings??? Here's a quick, no fuss version I use: Toss raw asparagus in olive oil or melted butter, spread out onto baking sheet (lined w/ foil for easy cleanup), sprinkle almonds or cashews on top, and bake at 450 in toaster oven or conventional oven for about 10 minutes. Top with parmesan when ready to serve. Delicioso!!!

Cheesy Ham and Hash Brown Casserole

I made this exactly according to the recipe, except that I baked it the night before without the parmesan cheese, then put it back in the oven in the morning for about 25 minutes with the parmesan sprinkled on top. Delicious!

Sweet Chipotle Grilling Sauce

I used this sauce to top country style that I cooked in the oven at 275 degrees for 2 hours. I basted with the sauce, and stuck under the broiler. Due to the high sugar content, it caramelized in about 8 minutes. Just spicy enough. I only give it 4 stars b/c it was really too sweet for me. Next time, I might try adding a little more soy.
