Chicken Piccata II

Reviewed: Jul. 3, 2007
This is the most flavorful chicken ever! I use more lemon juice (1/4 cup) it creates such a fantastic flavor. This is a request always in our house. The kids and my husband LOVE it. Since I have been making this recipe for a long time,I also cut the chicken breast into 3 pieces for quicker cooking.

We thought this was awesome. Used Rigatoni instead of the rice. My family doesn't like mushrooms so I left them out. Served with a green salad and baking mix biscuits. EXCELLENT WEEK NIGHT MEAL~

Gorgonzola-Garlic Dip

BEST DIP!! Used less oil (3 TBS) and added about 12 coarsely chopped kalamatas- everything else the same. EXCELLENT taste. Used pita chips as the dipper. YUMMY.

Cowboy Cookies III

Reviewed: Nov. 21, 2009
I was one of the ones that DID NOT get the right result. I was lookng for FLAT AND SOFT and got thick and crunchy. But they were so good! YUMMY! Part of my problem was that I didn't realize that we didn't have eggs- I subbed 2 TBLS Milk and 1 TBLS olive oil. THESE COOKIES WERE GONE THE NEXT DAY- really good.

Pumpkin Fluff Dip

Lighter than I thought it would be. Pretty tasty- served it with Nilla Wafers and Ginger Snaps. Next time I may add a bit more spice. This would be SO good in a pie shell and frozen- YUMMO!

Sopapilla Cheesecake Pie

Reviewed: Aug. 15, 2009
WOW- talk about the best smell coming out of the oven! WOW! Used 1/2 cup sugar in cheese mixture- didn't roll out the crust just pressed the seams together- top and bottom. sprinked sugar on top to cover dough and topped with cinnamon and about 2 TBS of butter just dropped on randomly in little dollops. Was plenty sweet even with less sugar. The girls at BUNCO like it a lot. THANK YOU FOR A GREAT RECIPE!

Seminary Muffins

Reviewed: Aug. 5, 2009
I LIKE em! I am watching my calories so I excluded the chocolate chips and nuts (boy they would be SO good in here) and added 1/4 cup of raisins. I only used 1/2 cup of brown sugar and thought they were sweet enough. Great breakfast muffin for just over 100 calories with the modifacations.

Pesto Turkey Burgers

Reviewed: Aug. 4, 2009
These were really good! I didn't use the Feta since my guys don't like it- just left it out. MOIST and VERY good! Used the mustard/mayo/red pepper sauce that another reviewer made- super tasty. I made these in an electric skillet vs the grill and they were JUICY! Update: Made these again with the Feta and EVERYONE includhing kids and my husband RAVED... DON'T leave it out...

Heavenly Halibut

Reviewed: Jul. 26, 2009
THIS WAS AMAZING!!!!!!!!!! WOW SO FLIPPING GOOD! Didn't put in the green onion and added two BIG hot sauce shakes. IT WAS delicious! Our Halibut was super thick so cooking time was longer but the fish was moist and DELICIOUS. I even used low fat mayo! I did not double the topping and thought it to be plenty. MAKE IT- RESTAURANT QUALITY...

Pace® Sirloin Steak Ole

Reviewed: Jul. 20, 2009
I have no idea if the steak was so good from the picante or the cooking but this was SO tender. Cooked sirloin on the grill- low heat to sear and then indirect heat for about 25 minutes- SO tender. Used about 8 oz of the hot picante!

Paprika Chicken with Mushrooms

Reviewed: Jul. 19, 2009
I thought this was SO yummy!! Made some changes as others recommended: 1.Added a ton of pepper, garlic salt and paprika and then added more when I added the mushrooms. 2.Before adding vegetables I addded 1/2 cup white wine and 1/2 cup water and 1 bouillon cube to the skillet to make a gravy. 3.Once the mushrooms cooked down I took the chicken out and added 2/3 cup of milk brought to a boil- added 1/2 a pound of cooked fettucine and then served. LOVE THIS RECIPE PREMISE- VERY EASY!!

AWESOME! I made this with a clove of fresh minced garlic instead of the powder and only had rice vinegar on hand. THE TASTE WAS VERY VERY GOOD!! Perfect for a plain green leaf salad.
