Risotto with Tomato, Corn and Basil

This was very good. I have never used milk in risotto before. I did add 2 chicken boullion cubes to the water-milk pot; knowing that milk and water alone wouldn't flavor the rice. Just by making that tweak the risotto came out beautifully. It was as very DELISH treat. I will make it again.

Spence's Pesto Chicken Pasta

This was tasty. Unfortunately, we didn't have mushrooms or artichokes and we think it would be delish with those added ingredients! Subbed red leaf lettuce for the spinach and it was good. I did slice the garlic and added some onion. Doubled the recipe for the family.

Marinated Greek Chicken Kabobs

I will be making these again. First time marinating with yogurt. It tasted great. Think next time I wil make sure the pepper and onion get some of the sauce too. My chicken had excellent favor. Really well done.

Broccoli Soup

Well as written its SO BLAND- doctored it up (had to!) and it was very good. Had to add a 1/2 tsp nutmeg, 1 Tbs garlic powder, 2 tsp salt, 1/4 tsp black pepper and 2 triangles of laughing cow light cheese. Couple of tsp shredded parm and it was very palatable.

Mandarin Chicken Pasta Salad

This was a GORGEOUSLY FRESH SALAD. So pretty and tasted great. I thought there was plenty of flavor in the dressing and boy does this salad make a TON. This was a very tasty salad on a hot summer night. Only sub was a sweet onion and I used 2 BBQ chicken breasts from a previous dinner.

Light Lemon Pesto Pasta

I am surprised that we didn't like this more. My family is all over pesto and garlic. For some reason the garlic overpowered our dish- to the point it was spicy, really spicy. And we could hardly taste the lemon. I made this exactly as baking nana suggested. No substitutions. I am not sure what happened but this isn't for us.- update!! Just had the leftovers and this was DELISH.

Cake Mix Cookies I

I think these came out fantastic for being so quick and easy. I used a butter cake mix and only about 1 and a Half cups of chips. Everything else was the same.

Waffle Cookies II

I only made 1/2 a recipe to see if we liked them. We did. They were really yummy! I doubled the cocoa powder and vanilla extract. Kiddos thought these were great. Quick and easy. We made 4 at a time. One scoop in the middle of each waffle section.

My husband made these for us today for breakfast and they were good. Kiddos and hubby like the fact that I add A tsp of vanilla and some salt to my recipe. Because of that we give it a 4. Can't go wrong with this one though.

Best Butternut Squash Soup Ever

Doubled the recipe. This soup is thin. Not thick, which is fine for me but if you are expecting a rich thick soup keep looking for another version. I chose this for the low calorie count. It's very tasty. Not too sweet which is great!! I made this to pop individual servings into freezer for fast lunches.

Patty's String Pie

We thought this was good. I had to add some garlic salt to the meat for flavor. The ricotta was hard to spread evenly. I think next time I will mix the egg, parm, and ricotta with the noodles and then spread in the pan. For the reviewer who didn't like the pasta sticking together- Remember the spaghetti is supposed to be stuck together- hence the name, pie.

Chicken Negresco

This was very good. I pan fried the chicken with the celery and added some mushrooms (based on the cooks note). Made the sauce in the pan that I fried the chicken in. I think that this would have been great out of the pot. I liked the crispy noodles but my guys didn't love them. I'd make this one again but I'd cover for the baking. Just a personal preference. Nice recipe mikemsd. I only needed to bake it for 30 minutes.

Dark Chocolate Crumb Bars

This was good. I took the advice of others and used 2 cups of flour and a full cup of butter. I think we had plenty of crust. I didn't pay attention and dumped all the morsels in the pan with the condensed milk. I think these are a delicious, dark decadent treat.
