Espetadas (Portuguese Beef Shish Kabobs)

The meat was so tender and the flavor was so good. Unfortunately it's was too salty. I'd make it again and cut the salt in half.

Seared Halibut with Bacon and Bean Relish

This was good. I did make some substitutions like mahi mahi for the halibut-it's cheaper and asparagus for the beans. It was super easy to make.

Turkey and Bacon Panini with Chipotle Mayonnaise

This was very good. I just used plain mayo. We don't like chipotle. The garlic, spinach, onion mixture is a winner!! I didn't have focaccia, I used a wheat loaf and it was very good.

Chicken Florentine Rice Casserole

This was SO YUMMY. I cut a few minutes off the time by using rotisserie chicken instead of fresh. I sauté the onion in the oil and added all the spices. Then I put the shredded chicken in the skillet to flavor it. Instead of Parmesan I used Romano and I subbed fresh spinach for the frozen. This was super tasty.

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

Do not be fooled by the easiness of this soup. It's AMAZING!! I wish I doubled the recipe. I did not blend the soup as others suggested. I kept the veggies whole. They were very soft. I added about 1/2 C half and half instead of the milk and used cornstarch instead of the flour. This one will be made again. YUMMMMO!!

I cut back on the sugar and red pepper by half and made my own honey mustard. I froze the patties for a few hours before grilling. These were really good.

This was great. I used dark corn syrup and made the "sauce" as the recipe stated. Once it was completely combined I took it off the heat. My bars were perfectly chewy. I used a Cup of both chips and it made the perfect amount of topping. I'll make them again.

Becki's Oven Barbecue Chicken

This was surprisingly tasty. The sauce was super zingy. I only used 3 tbs of sugar and 3/4 C ketchup. I also used spicy brown mustard. I prefer breasts so I baked them (sliced thin) at 350 for 45 min. Everyone really liked this!!

Zeke's Tortilla Soup

This tasted delicious. I am sorry to say I did tweak it a bit based on some left over items I had from Super Bowl apps that I had in my fridge. I don't like to waste items. I halved the recipe to serve to my family of 5. We served it with fish tacos. Everyone had seconds and we had a serving left over. It makes a TON! I used 1/2 a rotisserie chicken which saved on time. I also only used one can of rotel (half recipe called for 1/2 can) that I blended up smooth. I added a 1/2 can of corn and a 1/2 can of red enchilada sauce. I kept the spices the same but cut back on the oregano- my recipe stated 2 TBS. After I put one in, it seemed like a lot so I added only another 1/2 TBS. I think there was too much. No one complained but I thought it was a bit much. I didn't have celery so I added a tsp of celery salt. My family gave it 5 stars.PS- There is no way I am frying tortillas when I have chips at home. LOL- crushed them for the top.

Open-Faced Grilled Tuscan Chicken Sandwiches with Fresh Mozzarella

This was super tasty. I used sourdough bread and grilling it is a MUST. I also used arugula but I dressed it very lightly with lemon juice and olive oil. It gave the sandwich a nice peppery zing. I t was a pain to eat. I have to be honest. The think grilled bread made it a bit hard to cut and eat. HOWEVER, the flavor was so good. THANKS FOR A DELICIOUS AND FAST DINNER.

This cake is very good. Donut double the icing like I did. It's way too much. Lol. You'll get the sugar sweats. The cake is moist. I used a 9x13 pan and had to bake for an additional 15. Came out GREAT

Zesty Lime Vinaigrette

Modified this based off lutzflcat's review. I scaled the recipe to half. Used only lime juice- no orange so I doubled it. Lime zest. No herbs de Provence so I subbed mrs dash herb and garlic. Shook it in a ball jar and it was darn tasty!!!
