Roasted Chicken Rub

Very good rub!! I love how it doesn't have any sugar in it. I rubbed it into 5 enormous bone in breasts and grilled them. They were super juicy. I agree with the other reviewer who said this tastes just like rotisserie. Well done semi!!! I didn't have celery flakes so I had to sub celery salt. I didn't add the kosher salt.

Honey Mustard Grilled Chicken

This was yummy. I grilled the chicken until nearly done THEN basted with the honey mustard so that it REALLY stuck. I'll make this again. We were pleased.

Beef Stifado

Warm Steak and Potato Salad

This was yummy. I microwaved my potatoes for 5 minutes and then wrapped them in foil with butter and salt and tossed them on the top rack of our grill. I grilled the steak with some seasoned salt. I added radish and we used our favorite dressings. Love a salad for week night dinner. Super quick!!

Chicken Fajita Melts

Thought this was a neat take on fajitas and a melt. It was easy to make and it was pretty tasty. I did take other's advice and toasted my bread. In fact, I added a bit of butter and garlic salt.

Nonna's Meatball Sub

This review is for the meatballs portion of the recipe only: I made exactly as written except I subbed grd. Turkey for the pork. These meatballs held up nicely!!!! I made them on the weekend and froze them raw. Today, we popped them in the oven for an hour at 350 then, put them in the sauce to simmer for a while. I originally froze them to put in the crockpot to simmer all day but that plan was thwarted when we forgot to make that happen. I used jarred sauce for ease but the sauce above looks great. I've made the anyday potato ceaser salad form the Canadian dairy farmers and it was 5 stars too!

Grilled Chicken and Pasta Salad

Well for being so simple this was VERY GOOD. I knew we'd be strapped for time on Monday night so I grilled the chicken and boiled the noodles on Sunday. The chicken was so juicy. I grilled it with dry rosemary and garlic rub and let it rest. I stored it whole in the fridge and sliced before serving. I added a bit of olive oil to the noodles to keep them from sticking. Nice Monday night meal.

Aunt Nancy's Baked Beans

This was SO GOOD!! I had to substitute some beans. What store doesn't carry butter beans?? I used white. I mistakenly bought chili beans instead of kidney beans but thank goodness they worked!!!! This was a big winner. And my youngest couldn't get enough. I put the beans in a foil wrapped/lined pan and baked them on the grill. I froze the left overs for another cookout weekend!!! Very very good. Thanks Lindsay!!! (And aunt Nancy!).

Possum Pie

We loved this one!! I added a half tub of cool Whip to a little bit of the chocolate pudding as a third layer. This was a perfect cool ending to a great cook out meal!!

Slow Cooker Low-Carb Santa Fe Chicken

I wouldn't consider this clean eating or low carb, however it was good. The flavor was very mild so if you aren't going to add hot sauce you may need to add more spices. In my opinion, if your chicken has been cooking long enough you don't have to remove it to shred it. It comes apart nicely by just stirring it. Ours was much more "soupy" than the photo. It was like a chicken chili. I added sour cream and cheese and served with tortilla chips.

Mascarpone Strawberry Cupcakes

These were good. Had to bake my cupcakes 5 min longer than stated. The glaze was really messy. I had to put another liner on the cupcakes to catch the drips. I hollowed out the cupcakes and piped strawberry prepared icing into the centers and a bit on top. These were good. Not amazing BUT GOOD.

QUICK AND EASY LEMON LOAF

Very yummy!! My guys wanted more syrup in the loaf. It was so yummy. I used butter and added 1 tbs of lemon extract to the batter. Super easy.
