Honey-Lime Chicken Enchiladas

Reviewed: Jan. 22, 2015
This was very, very good! I did cut back on the honey by half and I also added a few chilies to the chicken as it cooked in the crockpot. That verde and cream sauce is so yummy. I used quest blanco between the layers and Colby jack on top.

Slow Cooker Sausage with Sauce

Reviewed: Jan. 17, 2015
Made as written for sandwiches and my fam did not like this. Suggestion from them was to cut up the sausage and put it over rice. Well wouldn't they choose that option. LOL. Maybe I'll make it that way next time.

Chewy Peanut Butter Brownies

Reviewed: Jan. 17, 2015
We ate them but the flavor is lacking. Made exactly as written and they came out perfectly cooked. Nice and chewy. They just didn't have a great peanut butter flavor. Won't make this recipe again.

Cindy's Snappy Sensational Superfood Soup

Reviewed: Jan. 10, 2015
The flavor was good. I subbed beef broth for the water. I doubled the recipe and I wished I wouldn't have doubled the lentils. It was too overpowered by lentils. The turnip was delicious. I doubled all the spices except the cinnamon. We put a dollop of sour cream in top and it was very good.

Skillet Chicken Bulgogi

Reviewed: Jan. 5, 2015
We loved this. I used only 2 T. sugar and doubled the soy sauce and the garlic because I had a bit more than a pound of chicken. Kept the other ingredients as written. I served this over fried noodles. To make the noodles I used 8 oz of cooked angel hair rough chopped into a hot pan with 1/4 cup butter and. 2 T peanut oil. Sprinkle with 2 chopped green onions and garlic salt. Fry until golden. Mix with steamed broccoli. Serve serve the bulgogi over top of the noodle. 5 stars. Chicken had AMAZING FLAVOR. Nice and spicy.

Homemade Chicken Cacciatore, Sicilian-Style

Reviewed: Jan. 4, 2015
Sometimes cacciatore comes out to tomatoey tasting. Not this one. This was fantastic. I added a tsp of onion powder and a tsp of red pepper flakes to the spices. I did add more garlic- about 5 cloves. What can I say we like garlic. For the chicken I used 2 bone in, skin on half breasts. It was very very good. I also had to sub Zinfandel for the burgundy. This was a huge winner in our house. I didn't have to add the flour mixture as my sauce was super thick on its own. THANKS KIM FOR A LOVELY MEAL.

Graham Cracker Carmelitas

Reviewed: Jan. 1, 2015
Used butter instead of margarine. And guess what I did? I forgot to add the second stick of butter!! I couldn't understand why the mixture didn't cover all of my crackers!! What I will tell you is that instead of Carmelita's we had Toffeelita's. The flavor is AMAZING!! Crunchy and hard over the cracker but still VERY GOOD!!

Easy Pepperoni Bread

Reviewed: Dec. 30, 2014
WOW. THESE ARE GOOD. Made as written except I added a 1/4 c of pizza sauce to the filling. It kept it from drying out. These baked up big and full. Make sure to get the egg wash down the side of the bread. I also made diagonal cuts across the top of the loaf before baking. Made one with pepperoni and one without. Both were great. Used the extra pizza sauce for dipping. One word of caution. I made these for dinner and they sat like a load of bricks in the stomach!! LOL. if making for dinner serve with a salad. As an appetizer for many people? Perfect.

Olio Di Oliva Tuna Salad

Reviewed: Dec. 30, 2014
This is so good. I travel for work and I tend to have favorite dishes at restaurants all over southern cal. I have a go to tuna salad at a little restaurant in the Beverly Center in Los Angeles. It's similar to this except it has wheat berries instead of the capers. Imagine how happy I was to be able to make this AT HOME. Yay!! I subbed onion for the celery. Linda, this is the BOMB NOM NOM. :).

Poulet aigu de Tarragon

Reviewed: Dec. 26, 2014
This was so good. The sauce was amazing. Can you believe the day I went to the store the boneless breasts were less money than the bone in? Made them with the boneless and we still had great flavor. I added a pint of mushrooms to the sauce. Will make again. Fam loved it all including the asparagus.

This was good. Very easy to make. The flavor is mild and I missed the tang that added lemon or sour cream would have added.

Perfect Crab-Stuffed Mushrooms

Reviewed: Dec. 26, 2014
I didn't have an EGG!! But I don't think it made a difference. They sure are cheesy. They have a very mild flavor so I added a scant 1/4 tsp of cayenne. Was very good.
