Pasta Salad with Homemade Dressing

Great recipe! I omitted parsley because I had none on hand and it wasn't missed. I did dress the salad about 24 hrs before serving. That may have resulted in the pasta tasting a little bland.

Dinah's Stuffed Mushrooms

Very good recipe. I took it to a progressive dinner and received many compliments. My changes: I used 4, 8 oz. pkgs. baby bellas (~30 ct), baked caps for 10 min. prior to stuffing, replaced 1/2 the gr. pepper with red bell pepper, used 2/3 stick unsalted butter in stuffing and about 1/4 c. of clam juice (reserved from can), and reduced drizzled butter to 1/4 c. I would use salted butter next time or add a touch more salt to the stuffing.

I decided to make this a bit more nutritious by using whole wheat flour for half the flour. I also used the suggestion of another reviewer and used bacon lard instead of shortening since I had it on hand. Halving the recipe was much more manageable.

Pumpkin Cheesecake in a Gingersnap Crust

I've made this twice. Once as directed and once in a mini muffin tray. Both times it got rave reviews. I substituted regular syrup for maple since I didn't have maple. I would also recommend less butter in the crust. Both times I made mine, much of the butter ended up seeping out of the springform while baking.

Chocolate Cheesecake II

This was a huge hit for the chocolate lovers. My husband was very pleased. I'm not a chocolate lover, but did enjoy this cheesecake. Changes I made: I halved the chocolate for the ganache. I used Ghiradelli dark chocolate. I also topped with homemade strawberry preserves (pureed) and homemade whipping cream.

Homemade Mac and Cheese

I make this recipe all the time. My only comment is that I think it calls for too much milk. I tend to start with 2 cups and go from there. I also like to stir in some extra bread crumbs to the mix before baking.

Basic Hummus

This is a great recipe I've used many times. My favorite add on is to double the garlic for garlic lovers hummus. A nice hispanic twist is to add cumin, chili powder, and paprika. YUM!

Cream of Mushroom Soup II

I ate the whole thing myself in just a few days. LOVE it! I used chicken stock instead of veggie, a milk and sour cream mixture instead of cream, and black pepper instead of white. My mushroom combo was shitake, crimini, baby bella, and button.

I uses more parsley, chives instead of onions (because I had it in the garden), a bit more mint, and about 1/4 c. more lemon juice. It was fantastic and gone before we knew it!

Spicy Cilantro Dressing

Love, love, love it! I made a few changes though. Bought garlic flavored, baked pita chips (because it's easier), added feta, omitted mint (didn't have any), used red wine vinegar in place of the white wine vinegar (I had red not white), and used pepper and lemon zest in place of the lemon pepper (didn't have lemon pepper). Everyone I've served it to loves it and asks for the recipe. Thanks!!!!
