Apple Enchiladas

We had leftover cherry pie filling, and I think I preferred it with the cherries. The apple stuffed shells were super sweet. I will give it 5 stars for easy, but I don't think I would make this again. It was a good way to use up leftover (almost stale) taco shells.

Broccoli and Ramen Noodle Salad

Someone asked me to make this for a shower, and I really didn't think I liked it. I made it for my family first, and we loved it! Even my picky eater liked it (I served the onions on the side). I used 1 package of ramen noodles for a double batch, and I made less dressings as I thought there was too much swimming in the bottom. I also used regular blanched peanuts, much less than called for. I put the nuts in right away since I was serving it within a few hours. The next time I make it I want to add dried cherries. Super easy to make, and very inexpensive as far as salads go.

Louisiana Sweet Potato Pancakes

I made these for dessert, and the leftovers I had for breakfast. Wonderful with butter and a cinnamon-sugar mixture sprinkled on top. You could use this recipe with squash, pumpkin, or carrots, too.

Quick and Easy Alfredo Sauce

This is the only homemade alfredo recipe I've ever tried. I love it, and it's super easy. Serve immediately. I made it ahead once, and it got too thick.

Potato and Egg Casserole

Surprisingly better tasting than I expected. I put a little grated cojack cheese on top near the end of baking. Also used much less butter. I might make it again, but there are much better breakfast casseroles. I was looking for something for a friend who is on a soft food meatless diet. This fit the bill for her purpose.

Molasses Sugar Cookies I

This is like the recipe I've used for 40 years except I use white sugar in place of brown sugar. I always used mild molasses until I could no longer find it in the store. I prefer to use less molasses and add some light corn syrup for a milder cookie. Better if underbaked a little.

Pumpkin Bread IV

I made this with frozen squash which was wonderful! I cut the oil down 1/2 and added applesauce as suggested. I also cut the sugar back which I don't think I'd do again. We like it with butter (there goes the benefit of cutting back on the oil) for breakfast.

Banana Oatmeal Crumb Cake

Very good. I used rolled oats which I wouldn't do again. I read about adding flour to the topping which I would do next time. Double batch didn't take very long to bake. We had it as breakfast and dessert.

Fresh Rhubarb Bread Pudding

This was wonderful! I normally prefer desserts warm, but this was better served cold the next morning. I served it with whipped topping. Next time I will add a little vanilla.

Special Cereal Bars I

I have used brown sugar which is great, too. Also, whatever cereal you have. Even mix and match. I like to use corn flakes, rice krispies, and Special K. Smashing the cereal makes it good. And I don't prefer to frost them, but butterscotch chips with chocolate chips is a good mix. Another tip is to put a few mini-chocolate chips into the cereal mixture when stirring. It makes a swirl effect which adds a little chocolate but not so much as the frosting.

Yummy Pork Chops

This recipe is really good! I'm always looking for a new way to make pork chops. The house smelled so good while these were baking! I had zesty Italian dressing, so that's what I used. My family loved them, and really that's what it's all about!

Jo Jo's Favorite Banana Muffins

These were wonderful and light! I used half and half instead of milk (I had some that was expired), and I added 1 tsp. of vanilla. I was also afraid 1 tsp. of cinnamon might be too much, so I just sprinkled a little in the batter. My family loved them!

Beef and Rice Medley

I read the previous reviews and made the commom changes: no peppers, but I added Worcestershire sauce, lots of salt, pepper, garlic powder, and corn. I also used Southwestern diced tomatoes. I waited for my family's response as I RARELY make a new dish. We served it in bowls and garnished with grated cheddar cheese. It was a huge hit! My hubby ended up putting his in a taco shell with sour cream and taco sauce! I love that I have something easy and new. My oldest daughter is always looking for potluck dishes to take in to work, I can't wait to share this with her. Maybe not BEST, but surely DARN GOOD.
