Enchiladas Suizas

This was a lovely and simple recipe, and so easily adaptable! I used a bottled green salsa (I recommend either Trader's Joes store-brand, or Herdez Salsa verde) which saved a lot of time. The prep went much faster than I expected and it turned our really nicely. Dipping the tortilla's in the salsa added so much nice flavor too. Just make sure to get plenty of cheese in case you have enough chicken for two dishes worth like I did. Of course, I made mine fairly small. Still, a lovely dish and makes even better left-overs!

Easy Batter Fruit Cobbler

I really love how easy and tasty this recipe is. I've made it several times and have tweaked it just a bit to work for me a bit better. I'd definitely recommend using a little extra fruit, although it works great with a minimal amount too. I've also accidentally left out half the sugar and it still ended up being plenty sweet for me. Lovely, simple recipe!

Baked Ziti with Sausage

Really lovely and simple recipe. Didn't really make any significant changes, and it turned out lovely. Making sure the noodles are still a teeny bit undercooked is definitely key though, since they definitely continue to absorb moisture in the oven.

Vegetarian Chili

Really great and simple recipe. I made a few adjustments based partly on some of the other reviews. One thing I'd definitely recommend is cooking the onion in a little olive oil first along with some garlic. I chose not to add the soy ground "beef" and it turned out great with out it. It's a nice a simple, and very easily adaptable recipe I'll be making again.

The Best Rolled Sugar Cookies

These are wonderful, flavorful and just all-round deeeelishus cookies! I followed the recipe exactly and encountered zero problems. I've made them for several parties, and people always rave about them and ask for the recipe!

Apple Oatmeal Crisp

This was a lovely and simple recipe! I actually forgot to add the white sugar prior to baking and I'm glad I did! It was plenty sweet with just the brown sugar in the topping/base, and I even used a tarter baking apple. I did add a little nutmeg as well, which was nice... Also, it ended up a tiny bit dry, probably because of the apples or something, or maybe because I forgot the white sugar, but regardless, it still tasted pretty great!

Best Apple Crisp Ever

I really liked this recipe, and while I haven't made that many Apple Crisps in my life, I've eaten plenty and really liked this, and so did my three friends who I shared it with. I'm not sure what kind of apples I used, but they were definitely on the less sweet and watery side. Best part is that it wasn't as overly sweet like so many others are, and it was super easy to make! I used whole wheat flour as my only alteration.

Bird Seed Energy Bars

I just LOVE this recipe. The only change I made was the same as some of the others have done, 1/2 applesauce and 1/2 oil, and it turns out great... It even freezes really well! I grab one on my way out of the house in the morning, and it's ready to eat by the time I get to my desk, and is great washed down with some good coffee! :)

Basil Shrimp

Oh my! SOOO good... And super easy. I didn't even let it marinade for the full hour, only about 20-30 minutes by the time they were on the grill. I offered one to my friend, he couldn't stop!

Lentil Chili

I really enjoyed making this recipe! Like some of the other reviewers, I prepped my lentils ahead of time by boiling them for a bit before I ever started the chili. I also had to add water to the mix since the chicken stock soaked up pretty quickly, but then, that might have just been me. I like just a tiny bit of spice and the two tablespoons was plenty. It was a really easy one to make, and nice and filling as well!
