Cheesy Creamed Spinach

Reviewed: Dec. 8, 2009
very good spinach. I made a healthier version with 1 T of heavy cream per each 10 ounce bag of spinach, and 1 slice of cheese. It was still very good!

Herbed Pork Roast

Reviewed: Apr. 5, 2009
This was very good. I also added olive oil to the herb rub as someone else suggested and it made it easier to stick to the roast. I took another suggestion and added chicken broth to the bottom of the baking pan while it was cooking. This was excellent!

This was awesome! We used the left overs the next day to make BBQ sandwiches. I made mine in the crockpot and cooked on low for 8 hours.

Oven Fried Chicken III

Reviewed: Mar. 15, 2009
This chicken was a hit! I used 1/2 cup mayo, 1 egg, and 1/2 cup milk for the coating. I also used Planko instead of bread crumbs. I cooked on 375 for 45 minutes and the outside of the chicken was crispy but the inside was still tender.

Chesapeake Bay Stuffed Rockfish

Reviewed: Mar. 5, 2009
This was really rich. I think if I made this again I would only use 1/2 pound of fresh lump crabmeat. Two of my family members enjoyed it and two said they would not want to have it again.

I also added 4 T of butter halfway through the fry time to give it more flavor since I am from the South! I cooked bone in chicken pieces in the electric skillet on 375 for 45 minutes. This chicken was awesome!

I covered the chicken for the first hour, then baked at 400 for 20 minutes. My family rated this meal just so-so and did not want me to make it again.

Eva's Savory Turkey Legs

Reviewed: Apr. 16, 2008
These turkey legs need much longer than 1 hour to cook. After 1 hour I took them out of the oven and grilled them for another 30 minutes over medium heat. The stuffing was very tasty.

Glazed Cornish Game Hens With Apricot Pistachio Dressing

Reviewed: Apr. 14, 2008
This was excellent. My husband loved it! I baked at 375 degrees instead of 450 and the hens were very well done on the outside. Next time I will try baking at 350 degrees for 50 minutes.
